What’s In The Box? August 10-16

Italian Summer
The Tuscan summer calls to mind visions of the perfect glass of wine served alongside garden-fresh produce simply and beautifully prepared. Hence, this week’s box captures the flavors of summer by way of Italy with a Tuscan-style ribollita stew crafted with imported cannellini beans, rustic bread chunks and fresh ingredients like rainbow Swiss chard, heirloom tomatoes and summer squash. Also included for this relaxed and refreshing meal: A classic Italian red wine, apricot jam and our own Grana-style cheese.

Here’s what you’ll find in your box this week:

Le Conserve della Nonna Cannellini Beans

Imported from Italy, these beautiful jarred beans are sure to add hearty appeal to this week’s summer vegetable ribollita.

Pine Nuts

These pignolia nuts are a lovely addition to a verdant pistou packed with fresh basil and ripe tomatoes—try adding it to the ribollita for a bright touch. (See recipes for details!)

Housemade Chicken Stock

Made from roasted Bella Luna chickens, our housemade stock is simmered with carrots, onions, parsley and celery and seasoned with just a dash of sea salt to lend an extra depth of flavor to this week’s ribollita recipe.

Italian Rustica Bread

This freshly-baked loaf is made at a small bakery in Snohomish using a wild yeast starter, which creates an airy, chewy bread with a delightfully-crisp crust.

Torre Raone Lucanto Montepulciano D’Abruzzo

Crafted from grapes grown in the Colline Pescaresi region of Abruzzo, Italy, this fresh and fruity red comes from a late harvest on the estate. Stored in steel to preserve the original flavor of those grapes, the resulting wine boasts notes of blackberry, black cherry and plum.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. As we reach late summer, the “girls” are enjoying the long summer afternoons and accompanying warm evenings, chasing bugs and eating tasty green weeds we pull from the garden.

Grana-Style Cheese

Made in our farmstead creamery, this hard Grana-style cheese is crafted from part-skim cow’s milk to allow for longer aging of 24 months or more. A beautiful finishing touch for this week’s ribollita, the drum-shaped cheese is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Apricot Jam

Our organic jam is crafted from gorgeous, bright orange Harglow apricots. This particular variety boasts an exceptional flavor and texture, making it ideal for cooking and preserving—enjoy!

Ripe Summer Fruit

Juicy green-fleshed cantaloupe.

Seasonal Organic Vegetables

This week’s produce selection also includes baby golden beets, fennel, cherry tomatoes, Walla Walla sweet onions, rainbow Swiss chard, green beans, heirloom tomatoes, Romanesco zucchini and yellow summer squash, plus slicing and Armenian cucumbers.
