What’s In The Box? August 16-22

Summering in France
Cool, crisp and colorful, Salade Niçoise is the hallmark of summer in France, layered with fresh produce like green beans, heirloom tomatoes and mini Romaine lettuce, plus creamy hard-boiled eggs and accents like briny black olives and protein-rich tuna. Thus, your box this week includes both local and imported ingredients to create your own version of the famous salad, plus summer berry jam, a crisp Sonoma Rosé, Pain au Levain baguette and our housemade galette dough to whip up a lovely peach-kissed dessert.

Here’s what you’ll find in your box this week:

Salade Niçoise Kit with Black Niçoise Olives & Canned Albacore Tuna

This week, we’ve included all the ingredients to craft your own version of Julia Child’s favorite salad (see recipes for details!). Protein-rich and perfect for patio dining, this Provençal staple balances the best in summer produce with the classic pairing of plump, briny Niçoise olives and flavorful canned Albacore tuna from local company Lummi Island Wild.

Pain au Levain Baguette

This slightly-nutty, slightly-sweet sourdough baguette epitomizes French country-style baking with a chewy crust and light, airy interior. Baked by our favorite bakery in Snohomish, this traditional Pain au Levain is crafted using the bakery’s own sourdough starter; serve it alongside this week’s centerpiece salad to complete the meal.

Ferrari-Carano Dry Sangiovese Rosé 2017

Featuring aromas of fresh‐picked wild strawberries, rhubarb, pomegranate and a touch of blood orange, this refreshing and lively wine from Sonoma Valley is balanced by mouthwatering acidity and an elegant finish.

Crème Fraîche

Crafted in our farmstead creamery from pasteurized organic sweet cream, our rich and silky crème fraîche adds a beautiful finishing touch to summer salad dressings.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. The “girls” are enjoying the long summer afternoons and accompanying warm evenings, chasing bugs and eating tasty green weeds we pull from the garden.

Galette Dough

Crafted from organic ingredients including all-purpose flour, sugar and organic butter, this housemade pastry dough adapted from a beloved Alice Waters recipe bakes up light and crisp, with a smooth buttery taste that pairs well with fresh peaches and other stone fruits.

Summer Berry Jam

Our housemade freezer-style jam is crafted from ripe, juicy berries hand-picked each morning during peak season. To preserve the wonderful fresh flavor and color, we make this jam with berries, organic cane sugar, fresh-squeezed lemon juice and pectin.

Ripe Summer Fruit

Juicy melon and yellow peaches from Tonnemaker Orchard.

Seasonal Organic Greens

Escarole and mini red and green Romaine lettuce.

Seasonal Organic Vegetables

This week’s produce selection also includes Cipollini onions, heirloom tomatoes, red beets, Piricicaba sprouting broccoli, green beans, Hakurei turnips and cucumbers.

Fresh Garden Herbs

Enjoy a bountiful selection of fragrant herbs this week: Parsley, mint, rosemary, tarragon and basil.

Seasonal Bouquet

A wonderfully fragrant bunch of summer blooms to brighten your home this week.
