What’s In The Box? July 27-August 2

Midsummer Splendor
As summer produce continues to ripen apace—from broccolini and carrots in the gardens to juicy peaches and cherries in the orchards—this week’s box puts the seasonal bounty to delicious use in a farm-fresh menu starring lemony risotto topped with bright cherry tomatoes and a plethora of fresh herbs, plus a rustic Italian loaf and fruity Yakima Valley Sauvignon Blanc to serve alongside. Blueberry jam, Grana-style cheese and freshly-picked garden greens also help to anchor this midsummer meal.

Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the region. When cooked with chicken stock and a splash of wine, it becomes creamy and starchy and is a great accompaniment to just about any flavor combination—try it this week tossed with fresh herbs, cherry tomatoes and bright, zesty lemon.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, our housemade stock is simmered with carrots, onions, parsley and celery and seasoned with just a dash of sea salt.

Italian Rustica Bread

This freshly-baked loaf is made at a small bakery in Snohomish using a wild yeast starter, which creates an airy, chewy bread with a delightfully-crisp crust.

Lobo Hills 2016 Sauvignon Blanc

Cool-fermented and aged on the lees for seven months, this dry white wine is fragrant with aromas of lemon peel, ruby grapefruit, hay and mint and also boasts a rich mouthfeel with flavors of pink rose apple, grapefruit and peach.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. As we hit midsummer, the “girls” are enjoying the long summer afternoons and accompanying warm evenings, chasing bugs and eating tasty green weeds we pull from the garden.

Grana-Style Cheese

Made in our farmstead creamery, this hard Grana-style cheese is crafted from part-skim cow’s milk to allow for longer aging of 24 months or more. A beautiful finishing touch for this week’s risotto, the drum-shaped cheese is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Blueberry Jam

Made here at Bella Luna in our farmhouse kitchen from our fresh-picked blueberries, organic cane sugar and pectin.

Ripe Summer Fruit

Lemons, peaches and cherries.

Seasonal Organic Vegetables

This week’s produce selection also includes orange carrots, broccolini, Hakurei turnips, kohlrabi, cucumbers and cherry tomatoes.

Seasonal Organic Greens

Red butter lettuce and escarole.

Fresh Garden Herbs

Fresh Italian parsley, mint, oregano and rosemary. Also included this week: Bright and beautiful edible nasturtium flowers!
