Thus, this week’s delivery is devoted to the glorious egg, and an extra-special one at that, too, with decadent oversize duck eggs from Oak Meadows Farm. Also filled with an assortment of egg-friendly pairings—asparagus and walnut pesto, fresh spring greens and edible flowers, hearty multigrain bread and aged Grana-style cheese—plus a bevy of recipe ideas, this box will help you cook the perfect egg.

Oak Meadows Farm Duck Eggs

With near-transparent egg whites and color-rich oversize yolks, duck eggs are a chef’s dream, lending flavorful appeal to a variety of dishes. This week, we’ve rounded up our favorites ways to use these local beauties from Ferndale’s Oak Meadows Farm—see recipes for ideas.

Walnut Pesto

Crafted in our farmhouse kitchen from toasted walnuts, freshly-grated Grana-style cheese, fragrant garlic and beautiful basil leaves, this Italian-style pesto is fantastic tossed with roasted asparagus and topped with a fried duck egg.

Locally Foraged Morel Mushrooms

These seasonal mushrooms are only available in the wild, developing a cult following of local ‘mushroom hunters’ who roam our forests looking for this treat of nature. Woodsy and earthy, yet delicate and rich, they are an excellent accompaniment to roasted vegetables.

Fresh Multigrain Bread

Made in downtown Snohomish by our favorite local bakery, this round loaf is made with locally-milled Shepherd’s Grain flour and 7 different whole grains, plus hints of honey and toasted sunflower seeds.

Château de Mirausse L’Azerolle Vieilles Vignes 2014

This beautiful red blend is crafted from a combination of Carignan, Grenache and Syrah grapes grown on the Château de Mirausse estate located near the town Badens in France and features a fresh mouthfeel and spicy, slightly-peppery finish.

Grana-Style Cheese

Our hard Grana-style cheese is crafted from part-skim cow’s milk to allow for an extra-long aging of 36 months or more. Ideal for grating over pastas, veggies or a perfectly-fried egg, the drum-shaped cheese is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.

Seasonal Organic Fruit & Vegetables

This week’s produce selection also includes pearl onions, baby red potatoes Hakurei turnips, baby artichokes, asparagus, broccoli rabe and baby cauliflower, plus lemons and locally-grown rhubarb.
