Spring Supper
As temperatures warm and sunlight continues to grace our wooded enclave, spring has reached the pinnacle as it begins the transition into glorious summer. Thus, this week’s box features the debut of such early summer favorites as butter lettuce greens and rainbow cherry tomatoes, as well as a fresh array of spring classics to help craft a light and bright lasagna that stars spinach greens, fresh ricotta and aged Grana cheeses and our own mushroom duxelles. Also included: Creamy, sea salt-kissed butter, fresh eggs and oversize garlic scapes fit for grilling—enjoy!

Fresh Spring Lasagna Kit

Everything you need to craft a bright and fresh spring lasagna, from savory mushrooms duxelles to creamy ricotta cheese—gather up the following ingredients and see this week’s recipe cards to get cookin’:

Spring Spinach

Iron-rich spinach greens.

Housemade Duxelles

An excellent complement to this week’s bright spinach lasagna, our housemade duxelles are made from a finely chopped mixture of wild mushrooms, shallots and herbs sautéed in butter and wine.

Fresh Ricotta & Aged Grana Cheeses

Use this dynamic duo to complete your lasagna! Rich, creamy, and mildly sweet, this lovely fresh ricotta is crafted in our farmstead creamery from cow’s milk whey and heavy cream, while our hard Grana-style cheese is crafted from part-skim cow’s milk to allow for an extra-long aging of 36 months or more.

Focaccia Bread

This soft, chewy Italian-style loaf is baked just for us by our favorite local bakery. Kissed with fragrant fresh herbs, it is delicious simply dipped in olive oil and a splash of balsamic vinegar.

Gerard Bertrand Cap Insula 2015 Red Blend

A rich, concentrated red from the Languedoc-Roussillon region of France, this full-bodied wine is made from a blend of 47% Syrah, 30% Grenache, and 27% Carignan grapes. Intense with notes of black cherry, plum, dark chocolate and pepper, it will stand up nicely to this week’s lasagna.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.

Cherry Valley Dairy Cultured Butter
with Gray Sea Salt

This silky-smooth butter from Duvall-based Cherry Valley Dairy combines sweet, grassy butter with artisan gray sea salt for a flavor profile that wows.

Seasonal Organic Greens

Tom Thumb butter and Red Fire lettuces.

Rainbow Cherry Tomatoes

The first cherry tomatoes of the season—these beautiful beauties come in a kaleidoscope of colors from Hedlin Farms in Mount Vernon.

Seasonal Organic Vegetables & Fruit

This week’s produce selection also includes Hakurei turnips, Pink Beauty radishes, Golden Frills mustard greens, yellow onions, and kale, plus lemons.

Fresh Garden Herbs

Enjoy a bountiful selection of fragrant herbs this week, including cilantro, mint, garlic, rosemary, thyme and oregano. Also included: Oversize elephant garlic scapes. Boasting a mild garlicky flavor, these tender stalks are wonderful sautéed in butter, grilled and drizzled in olive oil or incorporated into a punchy pesto dip.
