This week’s box is packed with the vibrant flavors of Italy, found in the forms of locally-made bucatini pasta, Italian sausage from Skagit River Ranch, and soft, pillowy focaccia—plus health-boosting, vitamin-rich produce like dried Porcini mushrooms and bright radicchio, plus carrots, Cipollini onions, garlic, fennel and a bevy of citrus fruit. Farm-fresh eggs, our signature chicken stock and freshly-baked lemon knot cookies help finish off this fresh and flavorful Italian lineup; mangia!

Carrots Marinated with Garlic & Oregano

This room-temperature dish packs in the flavor and makes for a lovely side dish.

Ingredients:
1½ pounds carrots, peeled and cut into 2-inch-long matchsticks or thin diagonal slices
4 garlic cloves, peeled and minced
1 tablespoon fresh oregano
¼ cup red wine vinegar
¼ cup fresh parsley, minced
1 cup olive oil
Pinch red pepper flakes
Sea salt and fresh ground pepper

Method:
1. Whisk together garlic, oregano, red pepper flakes, vinegar, olive oil, salt and pepper in a large bowl.

2. In a large pot, bring water to a boil, adding 1 tablespoon salt. Add carrots and cook until just crisp-tender, about 2 minutes.

3. Drain carrots and add to marinade, letting sit in fridge overnight. When ready to serve, return to room temperature and adjust seasonings if needed. Transfer to serving platter and top with parsley.

Spice things up with this week’s taco-themed box, which comes complete with Skagit River Ranch’s signature chorizo sausage and organic, locally-crafted whole wheat tortillas. Top your tacos with some chopped yellow onion, fresh microgreens, a few cilantro springs and a squeeze of Makrut lime—plus a spoonful of locally-made chunky salsa—and you’ve got all the makings of a Southwestern-style feast. Also included: Sliced multigrain bread, corn muffins, farm-fresh eggs, our signature beef stock, housemade potato chips, Cara Cara oranges and smoky-sweet Guajillo chili powder. Enjoy!

Honey & Thyme-Roasted Carrots with Quesco Fresco

A delightfully-fresh spin on roasted carrots.

Ingredients:
1 bunch carrots, peeled
2 teaspoon butter, melted
2 teaspoon honey
½ teaspoon fresh thyme
⅛ teaspoon Guajillo chili powder
⅛ teaspoon smoked paprika
½ cup queso fresco, crumbled
¼ cup pomegranate seeds
Sea salt and fresh ground pepper

Method:
1. Preheat the oven to 425° and line a baking sheet with parchment paper or foil.

2. In a small bowl melt butter in the microwave (about 15 seconds). Add honey, thyme, chili powder, smoked paprika and a pinch each salt and pepper to the melted butter and mix together.

3. Pour the seasoning mixture over carrots and toss to make sure they are evenly coated. Spread carrots out on the baking sheet and roast for 20 minutes, flipping after 10 minutes.

4. Transfer roasted carrots to a serving dish and top with crumbled queso fresco and pomegranate seeds. Serve warm.
