Spring Risotto Night
Rich with comforting flavors, yet bright with spring ingredients, this week’s risotto-themed box is equally fit for a grand feast, or an intimate meal for two. Have fun experimenting in the kitchen with all the provisions for a lovely risotto crafted with our signature chicken stock and topped with imported Parmigiano Reggiano and gorgeous vegetables like first-of-the-season asparagus, baby leeks, and carrots. Inside you’ll also find: Gruyère cheese bread, Sauk Farm’s apple cider, locally-crafted pickles, farm-fresh eggs, and beautiful spring greens like Bibb lettuces, arugula and a fresh salad mix. Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the area. When cooked with our flavorful chicken stock and a splash of white wine, it becomes creamy and starchy and is a great accompaniment to just about any flavor combination. This week, we recommend a bright, verdant springtime version with fresh asparagus, tender shallots and baby leeks; see recipes for details.

Gruyère Cheese Bread

Made in nearby Snohomish by our favorite bakery, this freshly-baked loaf balances rich Gruyère cheese with a light, crisp crust.

Parmigiano Reggiano Cheese

Crafted from cows’ milk and aged at least 12 months, classic Parmigiano is named after two of the areas which produce it, the provinces of Parma and Reggio Emilia, in Italy. Featuring a pale golden rind, this imported cheese adds the perfect finishing touch to this week’s risotto.

Bodegas Ego Goru Verde

Black cherry, plum and cocoa flavors mingle in the round, juicy texture of this Spanish red. Smoky and earthy notes add a savory character, while a lively acidity and firm tannins give this beautiful wine focus.

Sauk Farm Honeycrisp Apple Cider

Crafted from cold-pressed Honeycrisp apples grown on Sauk Farm in Concrete, Washington, this refreshing cider is delicious served crisp and cold all on its own, or is mixed into your next cocktail.

Farm Fresh Eggs

As they spend more time outdoors in their run, our small flock of heritage breed laying hens are enjoying succulent popweed pulled from the gardens along with an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, beige and cream.

La Boîte Rub Adom

This fragrant blend of paprika, chili and garlic is excellent for serving meat, or tossed with roasted vegetables for a spicy-savory kick.

Britt’s IPO Pickles

These crisp, full-sour pickles crafted by Britt’s Pickles in Pike Place Market are naturally-fermented in oak barrels and seasoned with fresh herbs and spices to give them an incredibly fresh flavor.

Maison Roucadil Mélange Fruits Rouges

A sweet-tart blend of dried strawberries, cherries and cranberries.

Farm & Larder Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.

Fresh Organic Greens
