Spring Color
From blue-hued Oyster mushrooms to ruby-red rhubarb, this week’s lineup is awash in a rainbow of color! Enjoy the best that spring has to offer with the likes of vivid red and gold beets, pink Cara Cara oranges and verdant leeks, plus fresh spring greens such as pea shoots, Shiso microgreens and Bibb lettuce. Also included in this bright box: Eggs from our heritage breed laying hens, garlic and chive cream cheese from Tunawerth Creamery, a unique organic grain and lentil blend, Italian Rustica bread and fresh herbs plucked straight from the garden.

Bluebird Grain Farms Organic Einka & French Lentil Mix

Commonplace centuries ago, this unique blend from Winthrop’s Bluebird Grain Farm contains a farro-like sweet, nutty einkorn grain as well as rich, peppery legumes. To prepare, simmer in water or chicken stock, then sprinkle with olive oil and coarse sea salt for a satisfying meal that can be served hot or cold all on its own. Or, you can certainly toss the beautiful mix with roasted spring vegetables, pan-fried mushrooms, or crisp salad greens to add additional heft and flavor.

Foraged Mushrooms

Both of this week’s locally-foraged funghi—which include the sizable King Trumpet and distinctive blue Oyster varieties—boast a beautiful meaty, mellow flavor when roasted in a little butter and chicken stock.

Italian Rustica Bread

This freshly-baked loaf is made at a small bakery in Snohomish using a wild yeast starter, which creates an airy, chewy bread and a delightfully-crisp crust. This bread is wonderfully sliced and grilled for crostini—rub each lightly-charred piece with a cut clove of garlic for extra flavor.

Côté Mas Rouge du Midi

This cracking little red from the Paul Mas Domaines in the south of France boasts lots of red fruits with some plum notes on the nose, softness and medium body on the palate, and fruity and pleasant finish.

Tunawerth Creamery Garlic & Chive Cream Cheese

Creamy and kissed with fragrant garlic and peppery chives, this lovely cream cheese hails from a small, family-operated creamery located in Tenino, Washington.

Farm Fresh Eggs

As they spend more time outdoors in their run, our small flock of heritage breed laying hens are enjoying succulent popweed pulled from the gardens along with an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, beige and cream.

Big Spoon Roasters Vanilla Caramel Almond & Cashew Butter

This gorgeous nut butter from North Carolina-based Big Spoon Roasters is chock-full of organic cashews, heirloom Mission almonds, organic maple syrup, organic coconut nectar, vanilla, and a touch of Jacobsen sea salt for a combination that’s indulgent, comforting, and downright delicious.
