Risotto Night
With rain, hail and even a few snow flurries this past week, winter is still giving us some chilly weather even as it begins to wane. So, warm yourself body and soul this week with a lineup centered around one of our wintertime favorites: cozy risotto crafted from Arborio rice, wild and earthy foraged mushrooms and our signature chicken stock, and finished with white truffle oil, Grana-style cheese and an addictive truffle, salt and cheese blend. Also including Gruyère cheese bread, Tunawerth Greek yogurt and sour cream coffee cake, this box is flush with seasonal produce like Chioggia radicchio, Chantenay carrots, Cipollini onions and Meyer lemons. Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the area. When cooked with our flavorful chicken stock and a splash of white wine, it becomes creamy and starchy and is a great accompaniment to just about any flavor combination, like this week’s dried wild mushrooms.

Dried Wild Mushrooms

These gorgeous wild mushrooms foraged by expert mushroom hunter Jeremy Faber and his team at Foraged & Found Edibles are rich in taste, imparting a pungent, woodsy flavor to any number of dishes, from risottos to soups.

House White Truffle Oil

We hunted down the lovely truffles for this housemade finishing oil on a winter’s day out in the woods with the help of Lidia, our friend’s truffle-hunting Lagotto Romagnolo dog!

Gruyère Cheese Bread

Made in nearby Snohomish by our favorite bakery, this freshly-baked loaf balances rich Gruyère cheese with a light, crisp crust.

Honoro Vera White Wine Blend 2020

Bright in color, the Spanish wine crafted from Verdejo and Sauvignon Blanc grapes exudes aromas of white flowers and fresh fruit, including exotic tropical notes. On the palate it is balanced and has a light and refreshing acidity.

Grana-Style Cheese

Made in our farmstead creamery, this hard Grana-style cheese is crafted from part-skim cow’s milk to allow for longer aging of 24 months or more, and is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Farm Fresh Eggs

Our small flock of heritage breed laying hens are on an early-to-bed, later-to-rise schedule with the short daylight hours. As they spend more time snug in their coop, the “girls” are enjoying an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, beige and cream.

Tunawerth Creamery Greek Yogurt

Perfectly-creamy, yet delightfully-tangy, this lovely yogurt hails from a small, family-operated creamery located in Tenino, Washington.

Farm & Larder Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with herbs, carrots, onions and celery and seasoned with a dash of sea salt.

Ritrovo Truffle, Salt & Cheese Blend

This beautiful mix of sea salt, grated Parmesan cheese and earthy black truffles is sure to be a new favorite; be sure to try it sprinkled on top of a warm bowl of mushroom risotto or scrambled eggs!
