What’s In The Box? February 23 – March 1

Simply Satisfying
Ward off the continuing chill this week with an easy, weeknight-ready supper inspired by the hearty flavors of Italy: Fresh rigatoni pasta tossed with beautiful baby kale, organic Italian sausage, locally-crafted Asiago Pressa cheese and dash of Porcini salt, plus rustic Italian bread and a fun Spanish red wine to go alongside salad-ready winter greens and side-dish-worthy produce like carrots, parsnips and leeks. Farm-fresh eggs, Cara Cara oranges, and lemon-kissed amaretti cookies add to the appeal to this comforting box, as does an herb selection that includes ultra-fragrant basil and dill—enjoy!

Here’s what you’ll find in your box this week:

Bellingham Pasta Co. Fresh Rigatoni

Derived from the Italian word rigato, which means “rigged” or “lined”, this traditional-style, tube-shaped semolina pasta is hand-crafted in nearby Bellingham.

Skagit River Ranch Italian Sausage

The pampered pigs raised on the Skagit River Ranch in Sedro-Woolley roam outdoors in certified-organic pasture land to root, dig, and cavort as only happy pigs can, thriving on a diet of flax seed, corn and wheat. Spiced with savory herbs, this delectable Italian-style sausage will add a flavorful, savory note to a hearty bowl of pasta this week.

Porcini Salt

Made with dried Porcini mushrooms, this beautiful, seasoned salt adds intense depth, flavor and a burst of umami to dishes!

Italian Rustica Bread

This freshly-baked loaf is made at a small bakery in Snohomish using a wild yeast starter, which creates an airy, chewy bread and a delightfully-crisp crust. This bread is wonderfully sliced and toasted for crostini—rub each lightly-charred piece with a cut clove of garlic for extra flavor.

Protocolo Organic Tempranillo 2018

Made of 100% Tempranillo and aged for three months in oak barrels, this great little Spanish red features aromas of red roses, red cherries, blackberry, spices and vanilla that lead to a smooth and dry, yet juicy, finish on the palate.

Ferndale Farmstead Asiago Pressa

Crafted by the cheesemakers at this family-owned and -operated farm in Ferndale, this Asiago Fresco is styled after the Pressata style of this cheese in Italy which is typically only aged 2-3 months; fresh whole cow’s milk from the farm gives this young version a sharp and grassy flavor.

Farm Fresh Eggs

Our small flock of heritage breed laying hens are on an early-to-bed, later-to-rise schedule with the short daylight hours. As they spend more time snug in their coop, the “girls” are enjoying an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, beige and cream.

Seasonal Fruit

Sweet-tart Cara Cara oranges.

Fresh Organic Greens

Enjoy a bounty of beautiful greens this week, including baby arugula, baby kale, Miner’s lettuce, and sweet-crisp pea shoots, plus Rosalba radicchio and Treviso radicchio.

Seasonal Organic Vegetables

This week’s produce selection includes leeks, carrots, pink winter storage onions and parsnips.

Fresh Garden Herbs

Garlic and thyme from the walled garden at Bella Luna Farms, plus fresh basil and dill from NW Farm, a family-owned, indoor vertical hydroponic company in Lacey that grows clean, sustainable, and local fresh produce.

Soft Amaretti Cookies with Lemon

Kissed with hints of lemon essential oil, these traditional soft, gluten-free Italian cookies are a wonderful little pick-me-up!
