First of all, how does it work? A handcrafted wooden box will be hand-delivered to your doorstep, where it will remain throughout the duration of your subscription. This is where your weekly Farm & Larder goods will be placed each week.
Spring Risotto Night
Rich with comforting flavors, yet bright with fresh ingredients, this week’s risotto-themed box sings of spring. Have fun experimenting in the kitchen with all the provisions for a lovely risotto crafted with our signature chicken stock, plus Arborio rice, wild mushroom duxelles and fiddlehead ferns. Inside you’ll also find: Fresh focaccia bread, duck and chicken eggs, fragrant fresh herbs, and produce like fennel, purple sprouting broccoli, Huckleberry Gold potatoes, baby beets, and more. Enjoy!
Here’s what you’ll find in your box this week:
Arborio Rice
This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the area. When cooked with our flavorful chicken stock and a splash of white wine, it becomes creamy and starchy and is a great accompaniment to just about any flavor combination, like this week’s wild mushroom duxelles.
Wild Mushroom Duxelles
Try pairing this week’s risotto with our housemade duxelles—a finely chopped mixture of fresh wild mushrooms, shallots and herbs sautéed in butter and wine.
Farm & Larder Chicken Stock
Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.
Focaccia Bread
Baked by New Day Bakery, this soft, chewy Italian-style loaf is kissed with fragrant fresh herbs. It’s delicious served warm and dipped in olive oil.
Terlato Pinot Grigio 2022
Complex and layered with ripe peach, pear, citrus notes, this crisp Pinot Grigio hails from the Friuli-Venezia Giulia region of Italy; it also features a pleasing, mouth-filling texture with a round, crisp mineral finish.
Farm Fresh Eggs
Our small flock of heritage breed laying hens is made up of three breeds: Black Copper Maran, Ameraucana, and Delaware. As they balance their time between foraging in their outdoor run during rain breaks and then snuggling up in their coop in the evenings, they also enjoy produce trimmings and fresh greens to supplement their diet of organic layer mash, and continue to give us fresh eggs in beautiful shades of brown, beige and cream that we collect throughout the day.
Duck Eggs
With near-transparent egg whites and color-rich oversize yolks, these local duck eggs are a chef’s dream, lending flavorful appeal to a variety of dishes.
Organic Greens
This week’s selection of gorgeous spring greens features watercress and red-veined sorrel.
Locally-Foraged Fiddleheads
A true spring delicacy! These tightly-coiled tips of the Lady fern are only available for a short time during the spring months and boast a grassy, slightly-nutty flavor when sautéed—they are a lovely addition to pasta, risotto or stir-fry.
Seasonal Organic Fruit & Vegetables
This week’s produce selection also includes: Fennel, white spring onions, purple sprouting broccoli, leeks, shallots, Huckleberry Gold potatoes, baby gold beets and orange carrots, plus Cara Cara oranges.
Garden-Grown Herbs
Chives, Italian parsley and green garlic from the walled garden.
