Galettes Galore

There is nothing more beautiful than a perfectly-browned galette emerging hot from the oven showcasing a mound of gorgeous jewel-toned fruits. And the real beauty for the home cook is how simple they can be to create with a few tricks! In this workshop, we will master the art of crafting the perfect galette dough and then transforming it into both savory and dessert galettes. We will share the fruits of our labor together over a light meal, and each student will leave with a galette of their own creation.

Pickling & Preserving

With deep winter approaching, what better thing to do than take to the kitchen to bottle up some summer for a rainy day? It is time to preserve all the bounty of the Pacific Northwest. Our resident farmer and chef, Pam Thompson, will show you how to make your very own apple butter as well as preserve it for later. While the apples are stewing, we will also make some preserved lemons and wine-poached pears. After working up an appetite, we will share a light meal together before you leave with several jars of creations to take home and recipes to recreate!

The Art of Butter-Making

We welcome you to join us as professional cheese and buttermaker Meghan McKenna teaches us how to make glorious cultured butter at home. We will use local Cherry Valley Dairy’s famous Jersey Cream to create French-style butter as well as Fleur de Sel butter, and a variety of compound butters for you to take home. You will leave the class armed with the skills you need to recreate butter at home, to the delight of your family and friends, as well as a product of your own creation! We will also make a classic ranch buttermilk dressing from scratch with our fresh buttermilk and then share in the fruits of our labor together over a light meal.

Fresh Cheeses & Artisan Cheese-Making

We welcome you to join us as professional cheesemaker Meghan McKenna guides us through the wonderful world of lactic cheesemaking. We will use local, farm-fresh goat or cow milk to create gorgeous artisan cheeses. We will start by making a French classic—fresh Chevre from goat milk or Fromage Blanc from cow. We will then play with shapes, flavorings and traditional coatings like vegetable ash to create individual cheese masterpieces. This class will also explore the next steps to creating delicious bloomy-rind cheeses like crottin and chaource. To finish, we will share in the fruits of our labor together over charcuterie and sparkling wine and each student will take home cheese, recipes and the confidence to make them again and again!

Valentine’s Day Cookie Decorating with Kids

(Adult to accompany child. Please no more than two children per adult)

A perfect present for your child and you to spend time together, or for perhaps Grandma or Grandpa to accompany your little one and give yourself the gift of time! We will be decorating cookies (certified nut-free!) with a plethora of decorative elements. Crème Fraiche, Mascarpone & Ricotta

We welcome you to join us as professional cheesemaker Meghan McKenna guides us into the wonderful world of cheesemaking. In this class, we will make a trio of European dairy classics: Learn how to culture your very own Crème Fraiche—the favored cooking cream of France—from two simple ingredients; Mascarpone is the slightly more decadent Italian cream, thick and tart; and lastly, we will dabble in the cheesemaking world with fresh, whole-milk Ricotta. (Once you’ve made this cheese from scratch you will never need to buy ricotta again!) You will take home recipes and the confidence to recreate these cheeses at home. To finish the day, we will share in the fruits of our labor together over charcuterie and sparkling wine, and each student will depart with a product of their own creation.
