Scorzonera Fritters

These delightful, Italian-style fritters make a wonderful appetizer, or just serve alongside a green salad to make it a full meal.

Ingredients:
4 Scorzonera roots, trimmed of greens
2 teaspoons fresh thyme
2 tablespoons butter
1 egg, lightly beaten
3 tablespoons fresh breadcrumbs
2 tablespoons grated Grana-style cheese
1 clove garlic, minced
3 tablespoons fresh parsley, chopped
¼ cup polenta
Sea salt and fresh ground pepper
Olive oil (for frying)
Lemon wedges (for serving)

Method:
1. Wash and scrub Scorzonera, then peel off skin with a vegetable peeler. Grate Scorzonera into a large bowl using a box grater. (You should have about 1½ cups once grated.) Place a large frying pan over medium heat and add butter to melt. Add in grated Scorzonera and thyme. Stir and fry until Scorzonera has softened, about 15 minutes, and then remove from heat.

2. In a bowl, combine Scorzonera, egg, breadcrumbs, Grana cheese, parsley and garlic, then season generously with salt and pepper. Divide mixture into 6-8 even patties (each about the size of a crab cake).

3. Place the polenta in a bowl, then dip each patty into the polenta and coat on both sides. Place pan back on medium heat and add enough olive oil to coat, Fry the fritters until golden, about 4-5 minutes per side. Transfer to paper-towel lined plate to drain, then serve warm with lemon wedges on the side.

Sweet Corn Fritters

These perfectly-crisp fritters are sure to be a new fall favorite!

Ingredients:
3 cups freshly-shucked corn kernels
2 tablespoons chopped fresh herbs of your choice, such as parsley, basil and chives
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
2 large eggs, lightly beaten
¾ cup heavy cream
Vegetable oil, for frying
Sliced scallions, for serving
Crème fraîche, for serving

Method:
1. In a large bowl, stir together the corn kernels, flour, sugar, baking powder, ½ teaspoon salt and ¼ teaspoon pepper. Stir in the eggs, herbs and heavy cream until the batter is well-combined.

2. Line a plate with paper towels. Coat the bottom of a large sauté pan with vegetable oil and place it over medium-high heat. Once the oil is hot, scoop 2- to 3-tablespoon mounds of the corn batter into the pan, spreading it lightly into a flat, circular shape. Cook the fritters for 2 to 3 minutes, then flip them once and cook them an additional 3 minutes until they’re golden brown and cooked through. Transfer the fritters to the paper towel-lined plate, season them immediately with salt and repeat the cooking process with the remaining batter, adding more oil to the pan as needed.

3. Garnish the corn fritters with scallions and a generous dollop of crème fraîche.

Roasted Corn Fritters

This savory-sweet fritters are wonderful served with this week’s Alder-smoked tomato honey.

Ingredients:
4 ears of sweet corn
F&L corn fritter mix
½ cup milk
2 tablespoons butter, melted
Vegetable oil, for frying
Sea salt and fresh ground pepper

Method:
1. To prep the corn, shuck the ears and lightly rub each cob with olive oil and sprinkle with salt and pepper before roasting in a 400° oven about 10 minutes or until kernels begin to brown. Allow to cool and then cut kernels cut from the cob.

2. Combine the corn kernels in a bowl along with the corn fritter mix, milk and melted butter; stir to combine.

3. Meanwhile, heat about 1 cup of vegetable oil in a deep sauté pan; once hot, drop spoonfuls of the prepared batter into the pot and fry the fritters until golden brown on all sides, about 2 minutes.

4. Remove to a paper towel-lined plate to drain. Sprinkle with sea salt if desired and serve with a side of tomato honey.

Tomato Fritters

A favorite throughout the Mediterranean, these delightfully-crisp nibbles are a wonderful pairing for a summer salad.

Ingredients:
3 cups ripe heirloom or cherry tomatoes, or a mixture of both, grated or finely chopped
3 purple scallions, purple and tender green parts, finely chopped
2 tablespoons fresh oregano, finely chopped
4 tablespoons fresh mint, finely chopped
Pinch of cinnamon (optional)
1¼-1 ½ cups all-purpose flour
½ teaspoon baking powder
Sea salt and freshly ground black pepper
Olive oil or vegetable oil for frying

Method:
1. In a large bowl, mix together the grated or chopped tomatoes, scallions, herbs, cinnamon if using, salt and pepper. Combine 1¼ cups of the flour and the baking powder in a small bowl and add it to the tomatoes, mixing well. Add flour if necessary to give the mixture the consistency of a thick batter. Taste and adjust the seasoning with salt and pepper.

2. Heat about 1 ½ inches of oil in a large, heavy skillet over medium-high heat. When the oil is very hot, drop a tablespoon of the batter at a time into the skillet and fry the tomato fritters on both sides until golden. Remove with a slotted spoon and let drain on paper towels. Serve hot.
