Mediterranean Favorites
The light and bright flavors of Greece lend themselves beautifully to this week’s box as luscious produce like cucumbers, cherry tomatoes, peppers and zucchini begin their summer ripening. Take advantage of this bounty with a menu starring our signature chicken stock, organic chicken breasts and rice to incorporate into a traditional Avgolemono soup, plus pepperoncini, Kalamata olives and sheep’s milk feta to use in a Greek village salad. A fresh Kalamata olive loaf and a bevy of seasonal fruit complete this feast of Mediterranean delights.

Avgolemono Soup Kit
Housemade Chicken Stock, Fresh Chicken Breasts & Long-Grain Rice

Everything you need to craft homey and heartening Avgolemono soup: In addition to long-grain rice and organic chicken breasts, our signature stock is made from roasted Bella Luna chickens and simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt. This immensely flavorful broth adds a beautiful richness to the rich, lemony soup—see recipes for details.

Pepperoncini & Kalamata Olives

Two Mediterranean favorites to add flavor and bite to your salad this week, crisp pepperoncini peppers and briny Kalamata olives.

College Cellars of Walla Walla 2015 Viognier

Crafted by the students of this nonprofit teaching winery located in Walla Walla, the 2015 Viognier is well-balanced with notes of apricot, honeysuckle and bright pineapple. A wonderful summer sipper, the wine is medium-bodied with a light, dry finish, aged in neutral oak tanks for extra body and flavor.

Kalamata Olive Bread

Baked for us at a small bakery in Snohomish, this rustic loaf is flecked with Kalamata olives. Airy, light and crisp, it is wonderful topped with a spoonful of homemade tzatziki and of course, more olives!

Sheep’s Milk Feta

Crumbly with a tart, salty taste, this traditional-style aged feta is crafted from 100% whole sheep’s milk and is especially delicious crumbled over salads.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. The “girls” are enjoying the long summer afternoons and accompanying warm evenings, chasing bugs and eating tasty green weeds we pull from the garden.

Fresh Fruit

Gorgeous black currants and Goldrich apricots, plus sweet Skeena cherries from Tonnemaker Family Orchard.

Seasonal Organic Vegetables

This week’s produce selection also includes golden beets, Nelson carrots, green onions, red and white new potatoes, Cherriette red radishes, Cocozelle zucchini, Glacier tomatoes, green slicing cucumbers, green cabbage, red bell peppers and Sungold cherry tomatoes.

Seasonal Organic Greens

A beautiful selection of Little Gem lettuce, baby red butter lettuce and red Salanova lettuce.

Fresh Garden Herbs

Fresh Italian parsley, garlic scapes, shallots, garlic, mint and lavender.
