Spring Risotto Night
Rich with comforting flavors, yet bright with spring ingredients, this week’s risotto-themed box is equally fit for a family-style feast or a romantic meal for two. Have fun experimenting in the kitchen with all the provisions for a lovely wild mushroom risotto accented by roasted asparagus topped with Taleggio cheese and our own Ligurian walnut sauce, plus a rustic bread loaf, Italian Chianti, and produce like radishes, leeks and a plethora of spring greens to serve alongside.

Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the region. When cooked with chicken stock and a splash of wine, it becomes creamy and starchy and is a great accompaniment to just about any flavor combination—including this week’s Trumpet mushrooms.

Locally-Foraged Mushrooms

Sauté these beautiful black Trumpet mushrooms with a little fresh shallot or garlic; they are wonderful added to this week’s risotto or scrambled eggs!

Housemade Chicken Stock

Made from roasted Bella Luna chickens, our housemade stock is simmered with carrots, onions, parsley and celery and seasoned with just a dash of sea salt.

Housemade Ligurian Walnut Sauce

Crafted from premium walnuts, extra-virgin olive oil, Grana-style cheese, garlic and heavy cream, our classic-style sauce is excellent served over roasted asparagus along with Taleggio cheese—see this week’s recipes for details.

Italian Rustica Bread

This freshly-baked loaf is made at a small bakery in Snohomish using a wild yeast starter, which creates an airy, chewy bread and a delightfully-crisp crust.

Castello di Farnetella Chianti Colli Senesei

Composed of 92% Sangiovese and 8% Merlot grapes, this appealing red wine from the Castello di Farnetella estate in Tuscany is round and mellow on the palate and features notes of berries, red fruit and vanilla.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.

Taleggio Cheese

This semi-soft Italian cheese boasts a beautiful pungent aroma and a mild, creamy taste.

Blueberry Jam

Made in the farmhouse kitchen from our fresh-picked blueberries, organic cane sugar and pectin.

Seasonal Organic Fruit & Vegetables

This week’s produce selection also includes asparagus, French Breakfast radishes, kale rapini, Ruby Sensation red potatoes, leeks, golden beets, Brussel sprouts, baby carrots and red onions, plus Cara Cara oranges and lemons.
