What’s In The Box? April 6-12

Cajun Spice
From fresh cornbread and whipped honey butter to red beans and basmati rice paired with spicy Andouille sausage, the classic flavors of the deep South await this week, blending beautifully with Pacific Northwest produce like purple sprouting broccoli, leeks and Lacinato kale raab. This boldly-assertive menu also features fresh citrus, housemade pickled okra, sweet challah bread and an espresso-infused dark chocolate bar to serve alongside these Cajun favorites.

Here’s what you’ll find in your box this week:

Red Beans with Skagit River Ranch Andouille Sausage

Our version of the classic Louisiana staple is crafted from premium red beans, sweet red peppers and fragrant spices, all slow-simmered with Bella Luna chicken stock in our farmhouse kitchen. For extra kick, this soul-soothing recipe also contains Andouille sausage made from the all-natural pork raised at Skagit River Ranch in Sedro-Woolley. (Please note: Smoked chicken from Double DD Meats has been substituted for subscribers who have requested no pork products.)

Basmati Rice

Serve this week’s spicy red beans over cooked, long-grain rice to finish the dish!

Bodegas La Cartuja Priorat 2013

Made from organic, estate-grown fruit aged just 6 months in oak barrels, this Spanish red blend is meant to be enjoyed young and boasts a highly perfumed bouquet of fresh flowers and dark berries. The smooth, silky finish helps this wine pair nicely with a crisp spring salad and this week’s rice and beans.

Challah Bread

Baked just for us by our favorite bakery in Snohomish, this fresh loaf boasts a sweet, rich flavor thanks to a traditional base of silky eggs and Shepherd’s Grain flour, plus a touch of sugar.

Farm & Larder Cornbread Mix

Our signature mix produces a classic, old-fashioned-style cornbread that highlights the natural sweetness of corn. It is best baked in a preheated cast-iron skillet until golden brown, then topped with our honey butter!

Whipped Honey Butter

Made from golden wildflower honey and organic sweet butter.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.

Housemade Pickled Okra

Excellent served alongside this week’s Cajun fare, our quick-pickled okra is spiced with peppercorns, mustard seed, vinegar and an assembly of fresh herbs.

Seattle Chocolates ‘Rainy Day’ Espresso Chocolate Bar

This luscious dark chocolate bar from local chocolatier Seattle Chocolates is infused with fresh-ground Northwest espresso to create the perfect rainy day pick-me-up.

Farm-Fresh Fruit

Juicy Cara Cara oranges and lemons.

Seasonal Organic Vegetables

This week’s produce selection also includes Lacinato kale raab, leeks, Brussels sprouts, Jerusalem artichokes, red onions and purple sprouting broccoli.

Seasonal Organic Greens

Spinach and dandelion greens.

Fresh Garden Herbs

Fresh parsley, thyme, garlic and shallots.
