What’s In The Box? December 8-14

Winter Comforts
Along with busy days and festive nights, December marks the arrival of winter as evidenced by our first flakes of snow this week. So, come in from the cold and warm up with a comforting winter supper starring risotto crafted with wild mushrooms and our own housemade duxelles, plus crisp Gruyère cheese bread, a beautiful Bordeaux red blend wine and all the ingredients for a fruit crisp dessert. Accompanied by winter squash, blueberry jam and even Rosalba pink radicchio, this box will do wonders to ward off the continuing chill.

Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the region. When cooked in flavorful chicken stock and a splash of white wine, it becomes creamy and starchy and is a great accompaniment to any flavor combination, especially our housemade duxelles and wild mixed mushrooms.

Housemade Duxelles

Try pairing this week’s risotto with our housemade duxelles—a finely chopped mixture of wild mushrooms, shallots and herbs sautéed in butter and wine.

Farm & Larder Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.

Gruyère Cheese Bread

Made in nearby Snohomish by our favorite bakery, this freshly-baked loaf balances sweet, nutty Gruyère cheese with a light, crisp crust. Absolutely delicious toasted or re-warmed in the oven—just sprinkle with a few drops of water and bake at 350° for about 15 minutes.

Château Beauregard Lagupeau Graves 2013

Made from a fantastic blend of Cabernet Sauvignon, Cabernet Franc and Merlot grapes grown in the Graves region of Bordeaux, this French wine pairs nicely with this week’s earthy mushroom risotto.

Farm Fresh Eggs

Our small flock of heritage breed laying hens are on an early-to-bed, later-to-rise schedule with the shorter daylight hours. As they spend more time snug in their coop, the “girls” are enjoying an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, blue and green.

Blueberry Jam

Made here at Bella Luna in our farmhouse kitchen from fresh-picked blueberries, organic cane sugar and pectin.

Fruit Crisp Topping

Made with dried cranberries, hazelnut flour, brown sugar, cinnamon and sweet butter, our savory-sweet crisp topping pairs wonderfully with fresh orchard apples and pears.

Ripe red D’Anjou pears, Gala apples and fresh lemons.

Seasonal Organic Vegetables

This week’s produce selection also includes wild mixed mushrooms, red Cippolini onions, Gilfeather turnips, curly kale, red-cored Chantenay carrots, cauliflower and lower Salmon Valley winter squash.
