What’s In The Box? February 8-14

Winter’s Best
This week’s delivery celebrates the season’s freshest offerings, from a comforting soup crafted from locally-foraged wild mushrooms and our signature chicken stock to two varieties of kale to toss in a salad with Cara Cara orange vinaigrette. Complemented by produce both savory—Delicata squash, baby radicchio and leeks—and sweet (like citrusy lemons and Lady apples), plus pumpernickel bread, farm-fresh eggs and even muffins, this menu is bursting with hearty flavor.

Here’s what you’ll find in your box this week:

Wild Mushroom Soup

Earthy and inviting, this soul-soothing soup is slow-simmered in the farmhouse kitchen and crafted from a combination of wild mushrooms, fragrant herbs, onions and our homemade chicken stock.

Hedgehog Mushrooms

Sauté these locally-foraged mushrooms with a little fresh shallot or garlic; wonderful added to this week’s soup or scrambled eggs!

Farm & Larder Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.

Pumpernickel Bread

Baked fresh just for us by a small bakery in nearby Snohomish, this slightly-sweet rye bread loaf is wonderful served alongside this week’s earthy mushroom soup and a winter salad.

Morning Glory Muffins

These delicious muffins are baked by our favorite local bakery in Snohomish. Crafted with cinnamon, vanilla, crushed pineapple and finely-grated carrots, plus healthy pumpkin and flax seeds, they will energize you for the day ahead.

Locations I-1 Italian Red Wine

Boasting a beautiful color spectrum of crimson and scarlet with a slight magenta band on the rim, this Italian red-blend from venerated winemaker Dave Phinney also entices with aromas of macerated raspberries, dried lavender, plum and toasty oak accents.

Farm Fresh Eggs

Our small flock of heritage breed laying hens are on an early-to-bed, later-to-rise schedule with the shorter daylight hours. As they spend more time snug in their coop, the “girls” are enjoying an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, blue and green.

Fresh Fruit

Lady apples, lemons and juicy Cara Cara oranges.

Seasonal Organic Greens

Baby radicchio, plus curly and Lacinato kale.

Seasonal Organic Vegetables

This week’s produce selection also includes red-cored Chantenay carrots, Yukon Gold potatoes, Delicata squash, winter leeks and yellow onions.

Fresh Garden Herbs

Fresh Italian parsley, rosemary, thyme, shallots and garlic from the walled garden and greenhouse at Bella Luna Farms.
