What’s in the Box? January 10-16

Hearty & Healthy
Happy New Year! Get 2019 off to a fresh start with this week’s lineup, which features a comforting soup crafted from roasted carrots simmered in our own chicken stock, plus nutty multigrain bread and fresh produce including Delicata squash, fingerling potatoes, Lacinato kale and a medley of colorful chicory. Coupled with petite baby Shiitake mushrooms, candied pork belly and locally-crafted soft cow’s milk cheese, this beautiful winter menu is both richly flavorful and resolution friendly.

Here’s what you’ll find in your box this week:

Roasted Carrot Soup

Our signature roasted carrot soup is packed with beautiful, farm-fresh carrots, plus yellow onions, garlic, fragrant herbs and a splash of silken cream. Simmered in our housemade chicken stock for added richness and flavor, this hearty soup is wonderful served with sliced multigrain bread for a cozy meal.

Multigrain Bread

Crafted in nearby Snohomish by our favorite bakery, this freshly-baked loaf is made with locally-milled Shepherd’s Grain flour, honey and seven different whole grains, all topped with toasted sunflower seeds.

Candied Pork Belly

Sweet with hints of brown sugar and savory with notes of spices, this candied pork belly will add flavorful appeal to the likes of roasted veggies, salads and eggs.

Baby Shiitake Mushrooms

This week’s box also includes beautiful organic mushrooms cultivated by the lovely folks at Cascadia Mushrooms in Bellingham. With their curled umbrella-shaped caps and tender thin stalks, these petite Shiitakes release a garlic-pine aroma when cooked and boast a rich, earthy flavor.

Il Était une Fois Ventenac 2017

This beautiful white wine hails from the Maison Ventenac located in the Languedoc-Roussill wine region of southern France. Light and vivacious, it pairs nicely with this week’s soup and a crisp chicory salad.

Farm Fresh Eggs

Our small flock of heritage breed laying hens are on an early-to-bed, later-to-rise schedule with the shorter daylight hours. As they spend more time snug in their coop, the “girls” are enjoying an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, blue and green.

Samish Bay Vache Cheese

This certified-organic, 200-acre dairy farm in Skagit County produces gorgeous artisan cheeses crafted from the milk of their herd of Milking Shorthorn cows. This particular soft cheese is similar in style to a goat cheese, but crafted from cow’s milk; creamy, velvety and versatile, it is wonderful added into salads or spread atop crostini.

Girl Meets Dirt Quince Marmalade

Made from beautiful quince harvested from a century-old tree, this scrumptious preserve from Orcas Island-based Girl Meets Dirt is lightly infused with organic sugar and lemon juice to achieve the perfect balance of tart and sweet—it’s delicious served with soft, creamy cow’s milk cheeses or a buttered baguette.

Seasonal Fruit

Tart-sweet Pink Lady apples.

Seasonal Organic Greens

Lacinato kale and a blend of pink, green and red chicory.

Seasonal Organic Vegetables

This week’s produce selection includes baby orange Nantes carrots, leeks, red onions, yellow onions, Delicata squash and parsnips, plus a medley of Amarosa, blue and purple skinned fingerling potatoes.

Fresh Garden Herbs

Rosemary and thyme from the walled garden and greenhouse at Bella Luna Farms.
