What’s In The Box? July 12-18

Italian Summer
The Italian summer calls to mind visions of a crisp glass of wine, homemade pasta and garden-fresh produce simply and beautifully prepared. Hence, this week’s box captures the flavors of summer by way of Italy with locally-crafted bucatini pasta tossed with our own fragrant housemade basil pesto and Grana-style cheese, plus a fresh sourdough baguette and a bevy of beautiful salad greens and ingredients like beets, carrots and sugar snap peas. Also included for this relaxed, refreshing meal: A classic French rosé and the first of the summer raspberries. Mangia!

Here’s what you’ll find in your box this week:

Fresh Bucatini Pasta

Hand-crafted in nearby Bellingham, this spaghetti-like semolina pasta has a hole running through the center—hence the name bucatini, which comes from the Italian buco, meaning “hole”, while bucato means “pierced”.

Fresh Basil Pesto

Crafted in our farmhouse kitchen from toasted pine nuts, Grana-style cheese, fragrant garlic and beautiful basil leaves, this classic Italian-style pesto is fantastic tossed with week’s fresh pasta.

Sourdough Baguette

This slightly-nutty, slightly-sweet sourdough baguette is crafted from the sourdough starter at our favorite local bakery in Snohomish; serve it alongside this week’s pasta to complete the meal.

Ravoire et Fils 2017 Domaine des Bellugues Rosé Mediterranée

Made by a small family estate named for the fireflies that live around the vineyard (bellegues means “spark”), this French rosé bursts with fresh fruit flavors and a crisp, bright acidity.

Grana-Style Cheese

Made in our farmstead creamery, this hard Grana-style cheese is crafted from part-skim cow’s milk to allow for longer aging of 24 months or more. Lovely grated over pasta, the drum-shaped cheese is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. The “girls” are enjoying the long summer afternoons and accompanying warm evenings, chasing bugs and eating tasty green weeds we pull from the garden.

Cherry Valley Dairy Herbed Rose Butter

This luscious aromatic butter from Duvall-based Cherry Valley Dairy combines the dairy’s signature gray salt butter with dried herbs, rose petals and lavender for a flavor profile that wows.

Strawberry Preserves

Our housemade freezer-style jam is crafted from ripe, juicy strawberries hand-picked each morning during peak season. To preserve the wonderful fresh flavor and color, we make this jam with berries, organic cane sugar, fresh-squeezed lemon juice and pectin. (That’s it!)

Fresh Summer Raspberries

The first crop of our own farm-fresh Tulameen raspberries has arrived!

Seasonal Organic Greens

Mesclun salad mix and escarole.

Seasonal Organic Vegetables

This week’s produce selection also includes carrots, Hakurei turnips, sugar snap peas, green onions, red beets and Piracicaba broccoli.

Fresh Garden Herbs

Enjoy a bountiful selection of fragrant herbs this week: Parsley, tarragon, sage and rosemary.
