What’s In The Box? June 22-28

Summer’s Here
It’s now officially summer, which (hopefully!) means sun-soaked days, leisurely evenings and produce-filled meals on the patio. Fittingly, this week we’ve captured the tastes of early summer, from crunchy radishes and baby bok choy to a bright risotto crafted from our own chicken stock and tossed with sugar snap peas, fava beans, mint, lemon zest and grey sea salt butter from Cherry Valley Dairy. Pair this dish with a glass of French red wine, a beautiful summery salad and grilled Pain au Levain bread, then sit back and enjoy the flavors of the season.

Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the region. When cooked with chicken stock and a splash of wine, it becomes creamy and starchy and is a great accompaniment to just about any flavor combination—try it this week tossed with fresh snap peas, fava beans, mint and lemon zest.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, our housemade stock is simmered with carrots, onions, parsley and celery and seasoned with just a dash of sea salt.

Pain au Levain Bread

This slightly-nutty, slightly-sweet sourdough loaf epitomizes French country-style baking with a chewy crust and light, airy interior. Baked by our favorite bakery in Snohomish, this traditional Pain au Levain is crafted using the bakery’s own sourdough starter.

Château Beauregard Lagupeau Graves 2013

Owned and operated by the same family since 1850, Château Beauregard is situated in the commune of Graves in France. Made from a fantastic blend of Cabernet Sauvignon, Cabernet Franc and Merlot grapes,, this gorgeous red wine pairs nicely with this week’s risotto.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.

Duck Eggs

With near-transparent egg whites and color-rich oversize yolks, these local duck eggs from SpringRain Farm and Orchards in Port Hadlock are a chef’s dream, lending flavorful appeal to a variety of dishes.

Cherry Valley Dairy Cultured Butter with Gray Sea Salt

This silky-smooth butter from Duvall-based Cherry Valley Dairy combines sweet, grassy butter with artisan gray sea salt for a flavor profile that wows.

Seasonal Organic Fruits & Vegetables

This week’s produce selection also includes fresh fava beans, sugar snap peas, Pink Beauty radishes, Swiss chard, baby bok choy and Hakurei turnips, plus lemons and limes.

Seasonal Organic Greens

Red butter lettuce, spinach, escarole and frisée.

Fresh Garden Herbs

Fresh garlic, shallots, peppermint, tarragon and thyme.
