What’s In The Box? June 9-15

Summer Preview
As temperatures warm and sunlight continues to grace our wooded enclave, spring has reached the pinnacle as it begins the transition into glorious summer. This week’s box features the debut of such early summer favorites as juicy Rainier cherries, speckly crunchy lettuces and beefsteak tomatoes. Utilize these seasonal favorites alongside fresh Pain au Levain bread and a light and lovely pasta crafted with Lagana Foods campanelle, Italian chicken sausage and Grana cheese-kissed roasted broccolini. Enjoy!

Here’s what you’ll find in your box this week:

Double D Meats Italian Chicken Sausage

Family owned and run since 1955, this Mountlake Terrace butchery only carries naturally raised meats, including this week’s chicken sausage. Spiced with fresh herbs and traditional Italian flavors, it adds a wonderful savory flavor to pasta.

Lagana Foods Campanelle Pasta

Founded by local superstar chefs Ethan Stowell and Kaela Farrington and made in downtown Seattle, Lagana Foods pastas are crafted using semolina flour and water, then cut to shape using traditional bronze dies. This curly campanelle (“little bells” in Italian) is the epitome of rustic elegance—try it this week tossed with chicken Italian sausage and Grana cheese-kissed broccolini greens; see recipes for details.

Pain au Levain Bread

This slightly-nutty, slightly-sweet sourdough loaf epitomizes French country-style baking with a chewy crust and light, airy interior. Baked by our favorite bakery in Snohomish, this traditional Pain au Levain is crafted using the bakery’s own sourdough starter; serve it alongside this week’s pasta to complete the meal.

Podere Ruggeri Corsini 2014 Langhe Bianco

This beautifully-expressive wine is crafted from a combination of hand-picked Arneis (50%), Chardonnay (20%) and Sauvignon Blanc (30%) grapes grown on this winery’s vineyards in the Monforte d’Alba region of Piedmont, Italy. It can be enjoyed as an apertif, or pairs nicely with light starters and salads.

Grana-Style Cheese

Made in our farmstead creamery, this hard Grana-style cheese is crafted from part-skim cow’s milk to allow for longer aging of 24 months or more. Ideal for grating over pasta, the drum-shaped cheese is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. The “girls” are enjoying long afternoons in the sun, chasing bugs and eating tasty green weeds we pull from the garden.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with fresh herbs and a dash of sea salt.

Rainier Cherries

The first of the local Rainier cherries have arrived! (Hint: Try frozen whole cherries for a refreshing treat on a hot day.)

Seasonal Organic Vegetables

This week’s produce selection also includes fresh fennel, beefsteak tomatoes, green onions, Pink Beauty radishes and broccolini.

Seasonal Organic Greens

Enjoy a beautiful selection of fresh spinach and baby chicory mix, plus Cergolaine baby red butter and speckly crunchy baby summer lettuces.

Fresh Garden Herbs

Fresh curly parsley, garlic, shallots and marjoram.
