What’s In The Box? March 8-14

Spring Fresh
As we say ‘hello!’ to March, we also warmly welcome the first flavors of spring, celebrated this week in a fresh lineup bursting with bright greens, pungent herbs and verdant veggies like broccolini and Romanesco cauliflower. Starring our signature housemade cauliflower soup kissed with earthy Porcini mushrooms, plus nutty Gruyère cheese bread, pecan fruit crisp topping, farm-fresh eggs and juicy citrus, this box also springs to life with such healthful produce as Chioggia beets, carrots and Shiitake mushrooms. Enjoy!

Here’s what you’ll find in your box this week:

Roasted Cauliflower Soup with Porcini Mushrooms

To produce this incredibly comforting soup, we first roast meaty cauliflower with top-quality olive oil and garden-fresh herbs and then blend those with leeks, onions, thyme, housemade chicken stock and just a touch of cream. Beautiful Porcini mushrooms also lend rich, earthy flavor to this lovely entrée.

Gruyère Cheese Bread

Made in nearby Snohomish by one of our favorite bakeries, this freshly-baked loaf balances sweet, nutty Gruyère with a light, crisp crust. Absolutely wonderful re-warmed in the oven—just sprinkle with a few drops of water and bake at 350° for about 15 minutes.

Kermit Lynch 2015 Vin de Pays de Vaucluse Blanc

Hand-selected by respected wine merchant Kermit Lynch, this beautiful Viognier and Chardonnay Rhone blend is sourced from grapes grown in the terroirs that surround the family-owned Domaine de Durban. Round-bodied in texture and yet tart and crisp, it also features aromas of pear, sun-baked apples and spicy anise.

Farm Fresh Eggs

Spending their time dodging raindrops on wet, almost-spring days, our heritage breed laying hens are now also enjoying the tasty green popweed we pull from the garden, in turn supplying us with eggs in beautiful shades of brown, blue and green.

Fruit Crisp Topping

Our signature fruit crisp topping is crafted from organic cane sugar, pecans, brown sugar, cinnamon, raisins and sweet butter. Wonderful paired with the Honeycrisp apples from your box, it also tops coffee cake with aplomb!

Fresh Fruit

Bright lemons, Pippin apples and juicy Cara Cara oranges.

Seasonal Organic Greens

Beautiful baby spinach greens

Shiitake Mushrooms

With their curled umbrella-shaped caps and tender thin stalks, these beautiful organic Shiitake mushrooms release a garlic-pine aroma when cooked and boast a rich, earthy flavor.

Seasonal Organic Vegetables

This week’s produce selection also includes carrots, Chioggia beets, baby red potatoes, yellow onions, Romanesco cauliflower and broccolini.

Fresh Garden Herbs

Fresh rosemary, thyme, parsley and garlic.
