What’s In The Box? May 17-23

Fresh Flavors
Crisp and crunchy, verdant and vivacious, the flavors of spring are freshening up this week’s lineup with such ingredients as asparagus, French tarragon, Little Gem lettuce and microgreens. Also featuring fresh lemon-pepper linguine, locally-foraged morel mushrooms and smoked salmon, plus rich and silky duck eggs and even a coffee-kissed butter, immerse yourself in the kitchen with a glass of wine and enjoy this plethora of seasonal favorites.

Here’s what you’ll find in your box this week:

Lemon-Pepper Linguine Pasta

Hand-crafted from wholesome, quality ingredients by Bellingham Pasta Co., this fresh linguine is kissed with citrusy lemon and fresh-cracked pepper for incredible flavor.

Locally Foraged Morel Mushrooms

These seasonal mushrooms are only available in the wild, developing a cult following of local ‘mushroom hunters’ who roam our forests looking for this treat of nature. Woodsy and earthy, yet delicate and rich, they are an excellent accompaniment to roasted vegetables, risottos and pastas. Or, simply sauté in butter or olive oil to enjoy on their own!

Lummi Island Smoked Wild Keta Salmon

Tender and perfectly flaky, this top-quality, reef net-caught Keta salmon is hot smoked over alder coals and kissed with just the right amount of sea salt and brown sugar.

Whole Wheat Pain au Levain Bread

This slightly-nutty, slightly-sweet whole wheat sourdough loaf embodies country-style French baking with a chewy crust and light, airy interior. Baked just for us at a small bakery in Snohomish, this traditional Pain au Levain is crafted using the bakery’s own sourdough starter, a classic pre-ferment culture made from flour and water.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.

Duck Eggs

With near-transparent egg whites and color-rich oversize yolks, duck eggs are a chef’s dream, lending flavorful appeal to a variety of dishes—enjoy a half dozen to incorporate into your dishes this week.

Cherry Valley Dairy Coffee Butter

This silky-smooth butter from Duvall-based Cherry Valley Dairy is crafted with fresh, locally-roasted coffee grounds that are steeped overnight in cultured cream before churning. The deep, earthy butter boasts subtle notes of cocoa and pepper and is wonderful atop a freshly-grilled steak, baked sweet potato or freshly-toasted Pain au Levain bread.

Seasonal Organic Greens

Baby Mesclun mix, microgreens, peppery arugula and Little Gem lettuce.

Seasonal Organic Vegetables & Fruit

This week’s produce selection also includes cauliflower, baby red beets, asparagus and spring onions, plus lemons.

Fresh Garden Herbs

Enjoy a bountiful selection of fragrant herbs this week: French tarragon, chive blossoms, parsley, oregano, thyme and garlic.
