Flavors of the Mediterranean
This week, we nod to the fresh, vibrant flavors of the Mediterranean with a produce-packed menu that includes salad onions, asparagus, lemons and Little Gem lettuce, as well as plethora of bright spring herbs, Kalamata olive bread and fresh feta cheese. Pop a spinach-kissed baked orzo into the oven, pop open a bottle of Italian white wine and then invite friends and family over to enjoy a true Mediterranean tradition—gathering around the table over great food and good conversation.
Here’s what you’ll find in your box this week:
Orzo Pasta
With its petite, rice-like shape, this pasta pairs beautifully with our housemade chicken stock and spring produce like spinach to provide a hearty main course.
Housemade Chicken Stock
Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, parsley, onions and celery and seasoned with a dash of sea salt and black pepper.
Kalamata Olive Bread
Baked just for us by our favorite small bakery in Snohomish, this Kalamata olive loaf is great freshly warmed from the oven—brush a little water on top before reheating to ensure a crispy crust!
Podere La Berta Trebbiano
Crafted from the refreshing Trebbiano grapes grown in Abruzzo, Italy, this light and crisp white wine pairs beautifully with pasta salads and crisp greens.
Feta Cheese
Creamy with just the right amount of tang, our housemade feta is crafted from a mix of Bella Luna goat’s milk as well as cow’s milk. Sprinkle this pungent, soft cheese over a fresh spring salad, or incorporate into this week’s baked orzo dish to add extra punch and flavor.
Farm Fresh Eggs
Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.
Blueberry Jam
Our housemade jam is crafted from juicy, ripe blueberries plucked at the height of the season. To preserve the wonderful fresh flavor and color, we make this jam with blueberries, organic cane sugar and pectin.
Seasonal Organic Fruit & Vegetables
This week’s produce selection also includes baby carrots, petite artichokes, Champion radishes, asparagus, golden beets, salad onions, baby red potatoes and baby cauliflower, plus lemons.
Seasonal Organic Greens
Little Gem lettuce, spinach, peppery arugula greens and spring salad mix.
Fresh Garden Herbs
Fresh garlic, shallots, parsley, rosemary, oregano, chive blossoms and mint.
