There’s nothing quite so gratifying after a wet, chilly day as a bowl of steaming-hot soup. In that spirit, this week we invite you to cozy up to our housemade wild mushroom soup, which is simmered in a savory chicken broth with cauliflower and farm-fresh herbs. Paired with Gruyère cheese bread and fall-fresh produce ranging from leeks and Lacinato kale to Delicata squash, plus stellar salad provisions like orchard apples and creamy blue cheese, this menu will satisfy both body and soul.

Here’s what you’ll find in your box this week:

Wild Mushroom Soup

Earthy and inviting, this soul-soothing soup is slow-simmered in the farmhouse kitchen and crafted from a combination of wild mushrooms, cauliflower, fragrant herbs, shallots and our homemade chicken stock, plus a splash of white wine, dry sherry, and a touch of cream. Serve warm with a sprinkling of fresh thyme!

Gruyère Cheese Bread

Made in nearby Snohomish by our favorite bakery, this freshly-baked loaf balances sweet, nutty Gruyère cheese with a light, crisp crust. Absolutely delicious toasted or re-warmed in the oven—just sprinkle with a few drops of water and bake at 350° for about 15 minutes.

Domaine des Cassagnoles Côtes de Gascogne 2017

Similar in style to a Sauvignon Blanc, this light white blend hails from the French winemaking region of Gascony. An ideal pairing for soup, it is aromatic and luscious with white pineapple and grassy notes.

Westward Blue Cheese

Similar in style to a gorgonzola, this creamy soft cheese boasts a gorgeous marbled center and flavorful bite, making it a wonderful complement to salad greens.

Farm Fresh Eggs

Our small flock of heritage breed laying hens are on an early-to-bed, later-to-rise schedule with the shorter daylight hours. As they spend more time snug in their coop, the “girls” are enjoying an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, blue and green.

Seasonal Organic Vegetables

This week’s produce selection includes leeks, pac choi, fennel, Delicata squash and Watermelon radish.

Seasonal Fruit

Juicy blood oranges, lemons and a mixture of apples from the orchards here at Bella Luna, including such varieties as Spartan, Macoun, Liberty, Gala, Lady, Golden Russet, Roxbury Russet and Honeycrisp.

Seasonal Organic Greens

Lacinato kale and a Castelfranco and Chioggia radicchio medley.

Fresh Garden Herbs

Italian parsley, thyme, sage and shallots.
