What’s In The Box? November 3-9

Risotto Night
Much like the autumn leaves bursting into brilliant shades of orange, scarlet and yellow, our gardens continue to grace us with colorful produce, from Acorn squash and broccolini to crisp-tart apples and spicy, peppery greens. Celebrate this beautiful bounty with a rich, warm risotto made with both our housemade duxelles and fall Cremini mushrooms, plus Pain au Levain bread and all the ingredients for a blue cheese and candied pecan spinach salad to serve alongside.

Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the region. When cooked in flavorful chicken stock and a splash of white wine, it becomes creamy and starchy and is a great accompaniment to any flavor combination, especially our housemade duxelles and fall Cremini mushrooms.

Housemade Duxelles

Try pairing this week’s risotto with our housemade duxelles—a finely chopped mixture of fresh mushrooms, shallots and herbs sautéed in butter and wine.

Farm & Larder Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.

Pain Levain Bread

Baked for us by our favorite small bakery in Snohomish using locally-milled Shepherd’s Grain flour, this airy and light loaf has a wonderfully crisp crust, making it perfect for crunchy crostini brushed with olive oil and salt and pepper.

Domaine de Malandes Chablis

Hailing from the historic wine-making town of Chablis in Burgundy, France, this light, dry white wine is famed for its minerality and crisp acidity. Crafted from Chardonnay grapes, it will pair nicely with this week’s risotto.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. With shorter days of fall, the girls are up with the sun to roam the outdoors; bedtime is coming much earlier now, as we see them heading into their house to roost as the sun is going down.

Westward Blue Cheese

Similar in style to a gorgonzola, this creamy soft cheese boasts a gorgeous marbled center and flavorful bite, making it a wonderful complement to a fresh salad of spinach greens, apples and candied pecans—see recipes for more details.

Candied Pecans

These salty-sweet nuts add delightful crunch to autumn salad greens.
