What’s In The Box? September 1-7

Hearty & Healthy
You’ll be feeling good with this week’s selection of wholesome whole grains, from the nutty and earthy organic farro orzo pasta—try it tossed with fresh peppers and onions, or baked in our signature chicken stock—to the subtly-sweet multigrain bread fit for toasting and slathering with our homemade apricot jam. Accompanied by a wealth of late-summer produce including multicolor string beans, super-sweet corn and beautiful beets, this healthful lineup is rounded out by our housemade Grana-style cheese and a French white wine.

Here’s what you’ll find in your box this week:

Rustichella D’Abruzzo Organic Farro Orzo Pasta

Imported from Italy, this organic orzo pasta is crafted from stone-milled farro grain flour and produced using artisanal methods like being cut to shape with hand-carved bronze dies and carefully air-dried for 56 hours. Boasting a delightfully rustic texture and nutty, earthy bite, it pairs beautifully with roasted summer veggies or late-summer peppers and onions—see recipes for details.

Farm & Larder Chicken Stock

Made from roasted Bella Luna chickens, our signature stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt. This immensely flavorful broth adds a beautiful richness to the likes of soup, risottos and of course, pastas like orzo.

Grana-Style Cheese

Made in our farmstead creamery, this Grana-style cheese is crafted from part-skim cow’s milk to allow for longer aging of 24 months or more. Wonderful incorporated into baked orzo (see this week’s recipes for details), the hard, drum-shaped cheese is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Fresh Multigrain Bread

Made in downtown Snohomish by our favorite local bakery, this round loaf is made with locally-milled Shepherd’s Grain flour and 7 different whole grains, plus hints of honey and toasted sunflower seeds.

Bedouet Clos des Grands Primos Muscadet Sevre Et Maine

The Melon de Bourgogne grapes used to craft this beautiful white wine are grown on the Close des Grands Primos vineyard in the Loire Valley using all-organic farming practices. Winemaker Michel Bedouet’s Muscadet is well-rounded with a long finish and full of ripe apple and lemon-lime notes.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. With shorter days that signal the coming of fall, the girls are up with the sun to roam the outdoors where they still enjoy the warm afternoons. Bedtime is coming much earlier now, as we see them heading into their house to roost as the sun is going down.

Apricot Jam

Our organic jam is crafted from gorgeous, bright orange Harglow apricots. This particular variety boasts an exceptional flavor and texture, making it ideal for cooking and preserving—enjoy!

Fresh Fruit

Charentais melon from Local Roots Farms.

Seasonal Organic Vegetables

This week’s produce selection also includes gold and Chioggia beets, green and purple string beans, red onions, super sweet yellow corn, yellow and red sweet Bullhorn peppers, Austrian Crescent potatoes, mixed heirloom cherry tomatoes and English cucumbers.

Seasonal Organic Greens

Escarole and Tom Thumb mini butter lettuce.

Fresh Garden Herbs

Enjoy a bevy of fragrant herbs this week: Rosemary, dill, garlic, parsley, thyme and French tarragon.
