The Perfect Egg
Creamy and rich, eggs are one of the world’s finest gifts to the cook, delicious scrambled, poached, whisked or fried. Thus, this week’s delivery is devoted to the glorious egg, and an extra-special one at that, too, with decadent oversize duck eggs in addition to those from our own brood of heritage-breed hens. Also filled with an assortment of egg-friendly pairings—think: smoked salmon, Italian Rustica bread, and Fontina cheese to help craft an Italian-style fonduta—plus, a bevy of fresh produce like asparagus, spring ramps and buttery Hakurei turnips, this box will help you craft the perfect egg.

Here’s what you’ll find in your box this week:

Duck Eggs

With near-transparent egg whites and color-rich oversize yolks, these local duck eggs are a chef’s dream, lending flavorful appeal to a variety of dishes.

Lummi Island Wild Smoked Keta Salmon

Tender and perfectly flaky, this top-quality Keta salmon fished fresh from the Fraser River retains its lovely moisture thanks to a low-salt recipe and light Alder smoke.

Italian Rustica Bread

Baked just for us at a small bakery in Snohomish, this airy, rustic loaf makes for great oven-crisp crostini—just brush with olive oil, sprinkle with salt and pepper and rub with a fresh-cut clove of garlic before toasting in the oven.

Fairhaven Mill Whole Grain Yellow Cornmeal

Nestled in the Skagit Valley, this family and farmer-owned certified-organic flour mill sources their grains from family farms across the country, guaranteeing freshness and quality from tilth to table. Made from organic dent corn, this cornmeal has a high starch content and distinct corny texture, helping to make for excellent muffins, cornbread, fresh tortillas and even crisp crackers (see recipes for details on that last one).

Christopher Michael Pinot Gris 2019

Extremely refreshing on the palate, this Pinot Gris combines grapes from vineyards located in both the Willamette Valley and Southern Oregon to create a beautiful balance between the wine’s bright citrus and tropical notes.

Our heritage breed laying hens supply us with fresh eggs in beautiful shades of brown, beige and cream.

Imported Val d’Aosta Fontina

This nutty, buttery Fontina-style cheese is imported from Italy and is crafted from sweet cow’s milk.

Housemade Apple Butter

A farmhouse favorite crafted from fresh-picked Bella Luna orchard apples, slow-cooked in a cider reduction and seasoned with brown sugar, lemon juice and cinnamon.

Ramps

These spring onions (also known as wild leeks) have a unique garlic-like aroma and add a wonderful punch to a variety of dishes!

Seasonal Organic Greens

Peppery arugula greens, plus pea and sunflower shoots.

This week’s produce selection also includes purple sprouting broccoli, Caracas carrots, Hakurei turnips, Viking purple potatoes, red radishes, red beets, asparagus, scallions, Walla Walla sweet onions, leeks and cauliflower, plus Meyer lemons and Cara Cara oranges.
