Spring Risotto Night
Rich with comforting flavors, yet bright with spring ingredients, this week’s risotto-themed box is equally fit for a family-style feast or a romantic dinner for two. Have fun experimenting in the kitchen with all the provisions for a wild mushroom duxelles risotto accented by grilled asparagus topped with a lemon-olive oil vinaigrette, plus nutty Gruyère cheese bread, spring produce like scarlet top turnips, golden beets and baby carrots, and finally, all the fixings for a rhubarb cake to serve for dessert.

Here’s what you’ll find in your box this week:

Arborio Rice

When cooked with chicken stock and a splash of wine, this traditional round-grain rice becomes creamy and starchy and is a great accompaniment to just about any flavor combination—including this week’s duxelles. We recommend serving this hearty, Italian-inspired entrée with a helping of grilled asparagus that has been topped with a light, lemony vinaigrette; see recipes for details.

Housemade Duxelles

An excellent complement to this week’s risotto, our housemade duxelles are made from a finely chopped mixture of wild mushrooms, shallots and herbs sautéed in butter and wine.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, our housemade stock is simmered with carrots, onions, parsley and celery and seasoned with just a dash of sea salt.

Gruyère Cheese Bread

Made in nearby Snohomish by one of our favorite bakeries, this freshly-baked loaf balances sweet, nutty Gruyère with a light, crisp crust. Absolutely wonderful re-warmed in the oven—just sprinkle with a few drops of water and bake at 350° for about 15 minutes.

Clos des Lumières L’éclat Côtes du Rhône Rouge 2017

This refreshing French Rosé is crafted from a medley of Syrah, Grenache, Cinsault and Mourvedre grapes which give the wine a very fine nose dominated by hints of strawberry, pink grapefruit and cherry.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.

Italian parsley, mint, chives, oregano, shallots and spring green garlic from the walled garden and greenhouse at Bella Luna Farms. Also included: Salad burnet, a perennial herb known for its crisp, clean, cucumber-like flavor.
