What’s In The Box? April 30 – May 5

Cajun Flavor
From sweet cornbread and honey butter to red beans and rice paired with spicy Andouille sausage, the classic flavors of the deep South await this week, blending beautifully with fresh, Pacific Northwest produce including radishes, beets and mixed baby lettuces. The boldly-assertive menu also features quick-pickled okra and a luscious red wine to serve alongside these Cajun favorites.

Here’s what you’ll find in your box this week:

Cajun Rice Spice Mix

This week’s box includes everything you need to re-create classic Louisiana-style red beans and rice with Andouille sausage, including this Cajun rice mix spiced with cayenne pepper, paprika, herbs, sea salt and fresh-cracked pepper—see recipes for full instructions to completing this satisfying dish.

Red Beans

Small premium dried organic red beans.

Tomato-Pepper Base

This fragrant, housemade base comprised of red pepper, green chiles, celery, bay leaves, tomatoes, spices, Tasso ham and chicken stock beautifully finishes this week’s entrée.

Skagit River Ranch Andouille Sausage

This pig has kick! Spiced with fresh-cracked pepper, hot paprika and cayenne pepper, this flavorful sausage from our friends at the Skagit River Ranch in Sedro-Woolley is crafted from their famous all-natural pork.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt and black pepper.

Farm & Larder Cornbread Mix

Our signature mix produces a classic, old-fashioned-style cornbread with the natural sweetness of corn. Best baked in a preheated cast-iron skillet until golden brown, then topped with honey butter.

Fresh Whole-Grain Bread

Crafted in nearby Snohomish by one of our favorite local bakeries, this round loaf is crafted with Shepherd’s Grain flour and 7 different whole grains, plus a hint of honey and toasted sunflower seeds.

Tscharke 2012 Shiraz Shiraz Shiraz

Sourced from three vineyards in the Barossa Valley of southern Australia, this exquisite, European-style red boasts wonderful complexity, with notes of blackberry, dark plum and licorice on the palate.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, supplying us with silky fresh eggs in beautiful greens and tans.

Honey Butter

Made with golden wildflower honey from Bella Luna Farms and organic sweet butter.

Chive Blossom-Honey Vinaigrette

This ruby red spring salad dressing is crafted from housemade chive blossom vinegar, apple cider vinegar, extra virgin olive oil, fresh cracked pepper and a touch of Bella Luna Farms honey.

Housemade Pickled Okra

Excellent served alongside this week’s Cajun fare, our quick-pickled okra is spiced with peppercorns, mustard seed, vinegar and an assembly of fresh herbs.

Seasonal Organic Fruits & Vegetables

This week’s produce selection includes lemons, sweet yellow onions, baby golden beets, Pink Beauty radishes and Anaheim chiles.

Seasonal Organic Greens

Mixed baby lettuces from Bella Luna Farms, plus Tom Thumb lettuce and spicy salad mix from Local Roots Farm.

Fresh Garden Herbs

Organically-grown Italian parsley, thyme, bay leaves, garlic, shallots and mint from the walled garden and greenhouse at Bella Luna. Also included: Spring chive blossoms to accent a fresh salad.
