Done well, the beginning of a meal is often more memorable than the finish, a delightful first taste that whets the appetite and hints at greater things to come. This week, we are celebrating the art of the appetizer with a bountiful spread in the French country style: Savory chicken liver pâté, crunchy cornichon pickles, whole grain herb mustard, fresh fig compote and more. Paired with an artisan baguette and crisp Prosecco, this beautiful first course is satisfying enough to last all evening long!

Here’s what you’ll find in your box:

Housemade Chicken Liver Pâté

Made with top-quality liver from Bella Luna Farm chickens, this French country-style spread is seasoned with fresh thyme and flavorful sherry. Wonderful served alongside a freshly-toasted baguette and our array of appetizers.

Cornichons

Our housemade cornichons are made using a traditional French recipe, crafted with Mathilde cucumbers and tarragon, with a grape leaf added to each jar during pickling to keep these petite, crunchy snacks nice and crisp!

Housemade Fig Compote

Crafted from juicy, ripe black mission figs, this summery spread is brightened with touches of lemon, honey, Prosecco wine and tart balsamic vinegar. Try it on crostini with aged Tomme, or with this week’s Taralli all’Olio Vergine crackers.

Whole Grain Herb Mustard

The perfect complement for chicken liver pâté and cornichons, our housemade spread is made with fresh herbs and whole-grain mustard seeds.

Taralli all’Olio Vergine

These delicious, crunchy crackers are imported from Terre di Puglia, Italy, and capture the fruity-yet-nutty taste of high-quality Italian olive oil and sea salt.

Fresh Artisan Baguette

Baked just for us at a small bakery in Snohomish, this light, airy loaf is great freshly warmed from the oven—the trick to a great crispy crust is to brush a little water on top before reheating!

Farmstead Cave-Aged Tomme Cheese

Finish off your appetizer platter with this delightful Alpine-style cheese. Made in our own micro creamery at Bella Luna, it is crafted with raw whole milk and extra cream from pasture-fed Jersey cows from the Snoqualmie Valley, then aged in our cave for six months, lending to a delightful, rich taste.

Andreola Prosecco

Situated in green hills of Treviso, Andreola is one among a recent set of higher-end Prosecco hailing from Veneto, Italy. Founded in 1984 by the Paola family, who still run it today, it is part of a new wave of small, family-owned wineries that now craft Italy’s most-recognized bubbly. Made using the traditional grape of the region, Glera, this bottling called “Dirupo” is a Brut, thus nice and dry, and of course refreshingly effervescent, and low in alcohol. The nose shows hints of honey and melon, while the palate is soft with tight, tingling bubbles and notes of citrus, honeydew, green apple, and a touch of mineral.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown, blue and green. With the long, warm days of summer, the “girls” spend their days outdoors chasing tasty bugs, taking dust baths, and enjoying the healthy greens and raspberry leaves we feed them from the garden.

Seasonal Organic Fruits & Vegetables

This week’s produce selection includes red radishes, heirloom Cosmonaut Volkov tomatoes and Salt and Pepper cucumbers from Local Roots Farm, plus our own Sungold cherry tomatoes, freshly-picked Regina peaches from Wapato, Washington and Walla Walla sweet onions.

Seasonal Organic Greens

Treviso radicchio and Skyphos red butter lettuce.

Fresh Garden Herbs

Fresh Italian parsley, basil, sage, silver thyme, shallots and Italian purple garlic from the Walled Garden at Bella Luna Farms.
