What’s In The Box? February 13-February 19

In honor of Valentine’s Day, the theme of this week’s box embraces two of our greatest loves: fresh, seasonal fare and gathering around the table with the ones we adore most. Thus, this rustic, romantic menu is fit for sharing with a crusty baguette, hearty Italian white bean soup and decadent chocolate brownies, plus a special appetizer collection that includes our own grainy mustard and country-style pork terrine.

Italian White Bean Soup

This hearty, robust soup packs in the flavors of Italy with fragrant herbs, white beans and pasta mixed with fresh carrots, onions, celery, Nero di Toscano kale and pancetta in a rich, homemade chicken broth. Drizzle with a swirl of olive oil, sprinkle with chopped parsley, and serve!

Winter Vegetable Gratin

A medley of fresh cauliflower, Brussels sprouts, chard, onion, and garlic topped with a rich béchamel sauce made from our own Vecchio and Tomme cheeses—ready to pop in the oven in individual serving dishes.

French Baguette

Baked for us at a small bakery in Snohomish, this loaf has a crisp crust and light, airy interior and makes for an ideal appetizer—just slice and serve with this week’s appetizer trio of country-style pork terrine, pickled onions and whole grain mustard.

Airfield Estates 2012 Unoaked Chardonnay

Crafted from grapes grown on an estate set in a historic World War II airfield, this crisp, dry wine is fermented in stainless steel tanks with no oak influence. Bursting with a vibrant acidity, each refreshing sip resonates with the zesty flavors of grapefruit and lemon-lime.

Jersey Tomme Cheese

This Alpine-style cheese is made in our in-house creamery with Jersey cow’s milk. Aged for more than six months, it is wonderful grated over this week’s soup or enjoyed as part of this week’s appetizer. Jersey cow’s milk is ideal for cheesemaking because of its higher fat content—the cheese is a rich golden yellow color, unlike goat’s milk cheese, which is naturally pure white.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green.

Housemade Pickled Pearl Onions

Made with fresh garlic, thyme, tarragon and fresh fennel bulb, these tangy petite onions and white carrots are delicious alongside this week’s country-style terrine.

Whole Grain Mustard

Our tangy housemade mustard is crafted with fresh thyme, tarragon and champagne vinegar for superior freshness and bite. Enjoy with this week’s baguette and country-style pork terrine.

Country-Style Pork Terrine

A rustic-style French forcemeat loaf crafted from ground pork, ham, and seasonings—also an excellent pairing for this week’s wine.

Housemade Lemon Poppyseed Vinaigrette

Toss this citrusy dressing made from Meyer lemon, olive oil, garlic, shallot, and parsley into your next salad. (It’s the perfect compliment to peppery arugula greens or roasted beets!)
