What’s In The Box? February 18-24

The Perfect Egg
Creamy and rich, eggs are one of the world’s finest gifts to the cook, delicious scrambled or poached, whisked or fried. Thus, this week’s delivery is devoted to the glorious egg, and an extra-special one at that, too, with decadent oversize duck eggs from Oak Meadows Farm. Also filled with an assortment of egg-friendly pairings—housemade duxelles, Challah bread, Fontina-style cheese and cultured butter kissed with gray sea salt—plus a bevy of fresh produce and recipe ideas, this box will help you craft the perfect egg.

Here’s what you’ll find in your box this week:

Oak Meadows Farm Duck Eggs

With near-transparent egg whites and color-rich oversize yolks, duck eggs are a chef’s dream, lending flavorful appeal to a variety of dishes. This week, we’ve rounded up our favorites ways to use these local beauties from Ferndale’s Oak Meadows Farm—see recipes for details.

Housemade Duxelles

Crafted in-house from a mixture of finely-chopped fresh mushrooms, shallots and herbs sautéed in butter and wine, this lovely accoutrement is a natural pairing for duck eggs. (We love it tossed with fresh pasta and topped with an olive oil-fried egg!)

Cherry Valley Dairy Cultured Butter
with Gray Sea Salt

This silky-smooth butter from Duvall-based Cherry Valley Dairy combines sweet, grassy butter crafted in the European style with artisan gray sea salt for a flavor profile that wows. Sprinkle it over salads, roasted root vegetables and of course, duck eggs, for the perfect finishing touch.

Fontina-Style Cheese

Fresh from our farmstead creamery, this nutty, buttery Fontina-style cheese is crafted from sweet cow’s milk. An excellent melting cheese, it is wonderful in this week’s recipe for classic ‘fonduta’, an Italian-style fondue.

Challah Bread

Baked just for us by our favorite bakery in Snohomish, this cylindrical loaf boasts a sweet, rich flavor, thanks to a traditional base of silky eggs, Shepherd’s Grain flour and a touch of sugar.

Luigi Bosca Merlot

A big and bold wine made from 100% Merlot grapes sourced from the Luján de Cuyo region of Argentina, the Luigi Bosca Merlot features bright notes of red currants, ripe plum and toasty vanilla, as well as a smoky finish, making it an ideal pairing for hearty proteins and warm, wintery meals.

Farm-Fresh Fruit

Candy Crisp apples from Tonnemaker Family Orchard and fresh lemons.

Seasonal Organic Fruits & Vegetables

This week’s produce selection also includes French fingerling potatoes, red beets, Lacinato kale, baby carrots, leeks, yellow onions and parsnips.

Seasonal Organic Greens

Fresh baby spinach.

Fresh Garden Herbs

Garlic, shallots, Italian parsley and thyme from the Walled Garden at Bella Luna. Also included: Fresh living basil from Utsalady Farms on Camano Island.
