Comfort Classics
With a few flurries the air and what we hope are the last frigid overnight temps this week, this lineup accordingly invites you to cozy up to a comfy supper starring a risotto crafted with earthy dried Porcini mushrooms, Cherry Valley Dairy fromage blanc and our own white truffle oil. Also accompanied by golden beets, purple top baby turnips, iron-rich spinach and beautiful garden-grown herbs, plus Gruyère cheese bread, lemony olives and chocolate-coated almonds, this box will do wonders to ward off any lingering wintertime blues (as will a glass of French white wine!).
Here’s what you’ll find in your box this week:
Arborio Rice
This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the area. When cooked with our flavorful chicken stock and a splash of white wine, it becomes creamy and starchy and is a great accompaniment to just about any flavor combination, like this week’s Porcini mushrooms and truffle oil.
Dried Porcini Mushrooms
Italian for ‘little pigs’, these meaty dried Porcini mushrooms foraged by expert mushroom hunter Jeremy Faber and his team at Foraged & Found Edibles are rich in taste, imparting a pungent, woodsy flavor to any number of dishes, from risotto to soup.
House White Truffle Oil
We hunted down the lovely truffles for this housemade finishing oil on a winter’s day out in the woods with the help of Lidia, our friend’s truffle-hunting Lagotto Romagnolo dog!
Gruyère Cheese Bread
Made in nearby Snohomish by our favorite bakery, this freshly-baked loaf balances rich Gruyère cheese with a light, crisp crust.
Clos des Lumières L’éclat Côtes du Rhône Blanc 2020
This refreshing French Blanc is crafted from a blend of Viogner, Grenache Blanc, and Bourboulenc. Beautifully balanced on the palate with an ample mouthfeel, it offers hints of vanilla, citrus fruits, and almonds on the finish.
Farm Fresh Eggs
Our small flock of heritage breed laying hens are on not-quite-so-early-to-bed schedule with the lengthening daylight hours. As they spend a bit more time outdoors in their run, the “girls” are now also enjoying succulent popweed pulled from the gardens along with an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, beige and cream.
Cherry Valley Fromage Blanc
This wonderful cheese is made from locally-sourced milk and farm-fresh herbs by Cherry Valley Dairy in Duvall. A creamy and just slightly tangy cheese, it can be used in place of ricotta or mascarpone in recipes. This week, we heartily recommend adding it into your risotto.
Farm & Larder Chicken Stock
Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.
Lemon Olives
These citrus-marinated olives are a wonderful little bite to set out while you stir risotto!
Fresh Organic Greens
Asian greens mix, pea shoots and iron-rich spinach.
Seasonal Organic Fruit & Vegetables
This week’s produce selection includes Walla Walla sweet onions, baby bok choy, purple top baby turnips, golden beets, Autumn Frost winter squash and parsnips, plus starting apples.
Fresh Garden Herbs
Italian parsley, mint and thyme from the walled garden and hoophouse at Bella Luna Farms.
Dick Taylor Chocolate Coated Almonds
This delicious treat is made by delicately roasting organic California almonds, and then using traditional coating pans, slowly building layer upon layer of the chocolatier’s signature 65% Belize dark chocolate.
