Sky Valley Farm Duck Eggs

With near-transparent egg whites and color-rich oversize yolks, these duck eggs from Sky Valley Farm in Startup near Sultan are a chef’s dream, lending flavorful appeal to a variety of dishes. This week, we’ve rounded up our favorite ways to use these local beauties—see recipes for details!

Hedgehog Mushrooms

Try cooking these locally-foraged mushrooms in a little butter with fresh shallot or garlic; wonderful served with sautéed greens and topped with a poached duck egg!

Multigrain Bread

Crafted in nearby Snohomish by our favorite bakery, this freshly-baked loaf is made with locally-milled Shepherd’s Grain flour, seven different whole grains, a hint of honey and toasted sunflower seeds.

Quinta das Arcas Arca Nova Vinho Verde

This dry, Porteguese Vinho Verde has attractive spice and crisp apple flavors, plus a mineral texture that finishes with a zing of tight acidity.

Farm Fresh Eggs

Our new flock of heritage breed laying hens are on an early-to-bed, later-to-rise schedule with the short daylight hours. As they spend most of their time snug in the coop, the “girls” are enjoying an extra helping of “scratch” (mixed grains and ground oyster shell) to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, beige and cream.

F&L Bread Pudding

Crafted with warming spices, raisins and farmstead eggs, this is one soul-soothing bread pudding—simply pop it in a 350° oven for 15 to 20 minutes to reheat and then enjoy!

Pear Vinaigrette
