What’s In The Box? February 6-February 12

The return of frosty temperatures has only increased our craving for a warm and cozy, yet fresh and flavorful, homemade meal. This week’s box delivers on both fronts with a vegetable-rich supper inspired by Italian country cooking—from the handmade kale pasta and herb-roasted winter squash to our housemade ricottone cheese and Marsala-poached pears. Here is the full list of what you’ll find in the box this week:

Pasta All’uova Di Cavolo

Fresh handmade kale pasta from our favorite local pasta maker. This seasonal special is delicious tossed with olive oil, sautéed pancetta and caramelized onions alongside herb-roasted winter squash.

Verdure Invernali in Brodo

With fresh carrots, leeks, celery, cauliflower and green chard, this satisfying vegetable soup is crafted in house from our own rich chicken broth and petite acini de pepe pasta.

Pain au Levain Bread

Baked just for us at a small bakery in Snohomish, this slightly nutty, slightly sweet sourdough loaf embodies country-style baking with a chewy crust and light, airy interior.

Airfield Estates 2011 Runway Syrah

This dark, concentrated Syrah crafted from grapes grown on an estate vineyard in the Rattlesnake Mountains possesses flavors of dark berry, clove, and white pepper. With silky smooth tannins and a plush round mouthfeel, this well-balanced wine pairs nicely with the cheeses in this week’s box.

Vecchio Cheese

With a full, rich flavor similar to Grana, our handcrafted mixed goat and cow milk cheese is aged for over one year and is ideal for grating over pasta or vegetables.

Ricottone Cheese

This hand-dipped ricotta-style cheese is made in our creamery exclusively from the creamy whey left after cheesemaking and is delicious served with pasta or drizzled with honey alongside fresh fruit or poached pears.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. To help them stay warm during this week’s extreme cold spell, the hens are getting extra organic grain, warm water morning and night, plus whey from cheesemaking for extra nutrients and protein.

Wildflower Honey

Golden wildflower honey from the apiary at Bella Luna Farms.

Seasonal Fruits & Vegetables

This week’s selection includes lacinato kale, kabocha winter squash, fingerling potatoes, parsnips, and sweet yellow onions.

Organic Winter Greens

Fresh frisée and hearty broccoli rabe (rapini).

Sage, thyme, rosemary, garlic and shallots from the Walled Garden at Bella Luna Farms.

Moscato-Poached Pears

Organic Bosc pears poached in sweet Italian wine—excellent for dessert with ricottone cheese or vanilla ice cream!
