What’s In The Box? January 13-19

Simply Delicious
This week’s box is fit for brunch, lunch and beyond with a beautiful array of provisions to play around with in the kitchen—from nutty wild rice and slow-simmered chicken stock to Shiitake mushrooms, housemade white truffle oil and farm-fresh eggs from our heritage breed laying hens. Also featuring such seasonal favorites as carrots, fennel, radicchio, orchard apples and gorgeous Kakai squash, this lineup is rounded out by fresh Pain au Levain bread, herbed fromage blanc, a refreshing French Rosé and garden-grown herbs—enjoy!

Here’s what you’ll find in your box this week:

Shiitake Mushrooms

With their curled umbrella-shaped caps and tender thin stalks, these beautiful organic Shiitake mushrooms release a garlic-pine aroma when cooked and boast a rich, earthy flavor.

Oregon Wild Rice

Nutty with an earthy complexity, this wild rice grown by the family-run Oregon Wild Rice farm in Harrisburg, Oregon, is a wonderful compliment for this week’s Shiitake mushrooms. Check this week’s recipes for a favorite crafted with our own chicken stock and topped with butter-browned mushrooms, fresh herbs, chopped hazelnuts and a drizzle of white truffle oil.

House White Truffle Oil

We hunted down the lovely truffles for this housemade dipping oil on a winter’s day out in the woods with the help of Lidia, our friend’s truffle-hunting Lagotto Romagnolo dog!

Housemade Chicken Stock

Made from roasted Bella Luna chickens, our housemade stock is simmered with carrots, onions, parsley and celery and seasoned with just a dash of sea salt.

Pain au Levain Bread

This slightly-nutty, slightly-sweet sourdough loaf embodies country-style French baking with a chewy crust and light, airy interior. Baked just for us at a small bakery in Snohomish, this traditional Pain au Levain is crafted using the bakery’s own sourdough starter.

Figuière Méditerranée Rosé 2020

Intended to be light, invigorating and easy-to-enjoy, this refreshing southern French rosé features flavors of peach, orange skin and white flowers that are accented by refreshing acidity and a salty minerality thanks to the influence of the Mediterranean sea.

Farm Fresh Eggs

Our small flock of heritage breed laying hens are on an early-to-bed, later-to-rise schedule with the short daylight hours. As they spend more time snug in their coop, the “girls” are enjoying an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, beige and cream.

Cherry Valley Fromage Blanc with Fines Herbes

This wonderful cheese is made from locally-sourced milk and farm-fresh herbs by Cherry Valley Dairy in Duvall. A creamy and just slightly tangy cheese, it can be used in place of ricotta or mascarpone in recipes.

Dick Taylor Vanilla Chocolate Bar

Crafted ‘bean-to-bar’ by this California chocolatier, this deliciously cream 55% milk chocolate is highlighted by a very special addition of Madagascan vanilla beans.

Seasonal Fruit

Meyer lemons, plus a mix of Pippen and Jonagold apples.

Fresh Organic Greens

Pea shoots, baby bok choy, and mixed radicchio.

Seasonal Organic Vegetables

This week’s produce selection includes Walla Walla sweet onions, carrots, fennel and Kakai winter squash, an endearing Japanese pumpkin with orange and green stripes and hulless seeds for snacking!

Fresh Garden Herbs

Tualco garlic, ginger and shallots, sage and thyme from the walled garden at Bella Luna Farms.
