What’s In The Box? January 16-22

This week, we are kicking off our second 2014 box delivery with all the ingredients for a warm and cozy risotto night: tuck into a classic, earthy wild mushroom risotto paired with golden roasted beets and a crisp Chardonnay, finishing with a hazelnut-topped fruit crisp.

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the region. When cooked, it becomes creamy and starchy and is a great accompaniment for any flavor combination.

House-made Chicken Stock

Made from roasted Bella Luna chickens, this stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt. Use within the week or freeze for later.

Fresh Crimini Mushrooms

Slice thinly and sauté; add to risotto or scrambled eggs!

Fresh Sourdough Loaf

From a small bakery in Snohomish, this oblong sourdough loaf is great freshly warmly from the oven. The trick to a great crispy crust is to brush a little water on top before reheating in the oven!

House-Made Raspberry Hazelnut Vinaigrette

Made with raspberry purée, Bella Luna wildflower honey, hazelnut oil, fresh ground pepper, sea salt and apple cider vinegar, this vinaigrette is perfect tossed with fresh greens or roasted beets.

Clos Du Val 2011 Chardonnay

Characteristic of Clos Du Val’s world-class style, this 2011 estate-bottled Chardonnay is pale gold in color with aromas of fresh apples, pineapple and pear accented with rich, tropical fruit flavors and a subtle hint of citrus.

Full bodied yet vibrant and culminating with a long finish, it is the perfect accompaniment to poultry and seafood.

Golden Beets

Great for roasting, these beets are very sweet. They can be eaten plain or tossed in our Raspberry Hazelnut vinaigrette with a little parsley.

Hazelnut Fruit Crisp Topping

An all-organic blend of hazelnut flour, all-purpose flour, cane sugar, sea salt, butter and a touch of cinnamon.

Roasted Organic Hazelnuts

Try adding to a salad of fresh winter greens.

House-made Blueberry Jam

Made from our own Northblue blueberries and organic cane sugar.

Fresh Farm Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green.

Aged Jersey Milk Tomme

An alpine-style cheese made with Jersey cow’s milk from the Dungeness Valley and
aged for more than six months; tastes great grated over the risotto.

Jersey cow’s milk is ideal for cheesemaking because of its higher fat content. The cheese is a rich golden yellow color, unlike goat’s milk cheese, which is naturally pure white.

Seasonal Winter Fruits and Vegetables

This week’s seasonal fruits include organic Bosc pears from Mt. Hood Organic Farm, and Gala, Aurora and Macintosh apples.

This week’s vegetables include organic acorn squash, yellow cippolini onions, yellow fingerling potatoes, and shallots.

Fresh Greens

Organic baby spinach, organic arugula, red upland cress, and lacinato kale – perfect in a salad with hazelnuts, pears and
our raspberry vinaigrette!

Garden Herbs

Garlic, French thyme,sage, rosemary and parsley from the Walled Garden at Bella Luna Farms.
