What’s In The Box? January 27 – February 2

Pasta Night
From spicy, organic Italian sausage from Skagit River Ranch to hand-crafted rigatoni pasta, this week’s box has you prepped for a delicious Sunday supper. Also including a gorgeous bounty of produce to add to your pasta as you please—think such favorites as Lacinato kale, rainbow Swiss chard and Walla Walla sweet onions—plus Sweet Dumpling winter squash, Meyer lemons and fragrant garden herbs, this lineup is also accented by focaccia bread, chocolate amaretti cookies, double cream cheese and our own signature olive oil-polenta cake mix to complete the meal. Mangia!

Here’s what you’ll find in your box this week:

Bellingham Pasta Co. Fresh Rigatoni

Derived from the Italian word rigato, which means “rigged” or “lined”, this traditional-style, tube-shaped semolina pasta is hand-crafted in nearby Bellingham.

Skagit River Ranch Spicy Italian Sausage

The pampered pigs raised on the Skagit River Ranch in Sedro-Woolley roam outdoors in certified-organic pasture land to root, dig, and cavort as only happy pigs can, thriving on a diet of flax seed, corn and wheat. Spiced with savory herbs and a touch of heat, this delectable Italian-style sausage will add a savory note to this week’s suggested pasta recipe.

Focaccia Bread

This soft, chewy Italian-style loaf is baked just for us by our favorite local bakery. Kissed with fragrant fresh herbs, it is delicious served warm and dipped in olive oil.

La Petite Perrière Pinot Noir

This lovely Pinot Noir from the Loire Valley in France boasts an intense aromatic richness, making it a perfect choice for a chilly winter’s night. Featuring a bright garnet robe with purple shades, it also boasts an outburst of freshness on the palate, with a body full of momentum and tension ending in a hint of vanilla.

Farm Fresh Eggs

Our small flock of heritage breed laying hens are on an early-to-bed, later-to-rise schedule with the short daylight hours. As they spend more time snug in their coop, the “girls” are enjoying an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, beige and cream.

Cherry Valley Dairy Meadow Bloom Cheese

This luscious, tangy, unctuous and mushroomy pasteurized double-cream bloomy rind cheese from Duvall-based Cherry Valley Dairy develops a nice briny earthiness as it ripens.

Seasonal Fruit

Meyer lemons and Cara Cara oranges.

Fresh Organic Greens

Chioggia radicchio, rainbow Swiss chard, Lacinato kale and a mix of braising greens.

Seasonal Organic Vegetables

This week’s produce selection includes Walla Walla sweet onions and Sweet Dumpling winter squash.

Fresh Garden Herbs

Italian purple garlic, Italian parsley, rosemary and oregano from the walled garden at Bella Luna Farms.

Lemon Olive Oil Polenta Cake Mix

This light and moist cake is a family favorite and boasts a wonderful texture thanks to the inclusion of polenta. Try it for dessert, topped with your choice of fresh berries and a generous dollop of crème fraîche or whipped cream.

Chiostro di Saronno Soft Chocolate Amaretti Cookies

Made with apricot kernels, pure chocolate chips, egg whites, almonds and sugar, these soft chocolate amaretti cookies beautifully combine the traditional taste of nutty amaretti with the pure goodness of chocolate for a divine flavor duo.
