Winter Comforts
As the temps dip sharply in the night and the frost often graces the ground, now is the time to cozy up with this week’s lineup of warm-and-wonderful offerings—rich, flavorful risotto accented with earthy mushroom duxelles and roasted Black Futsu squash, plus Grana-style cheese, Italian Rustica bread and a vibrant produce selection that includes Brussels sprouts, carrots, peppery arugula and Lacinato kale. Also complemented by bright winter citrus, plus Big Spoon Roasters’ nut butter bars, this lovely winter’s meal begs to be eaten fireside, tucked in your favorite chair, with a glass of wine in hand.

Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the region. When cooked in flavorful chicken stock and a splash of white wine, it becomes creamy and starchy and is a great accompaniment to any flavor combination, especially our housemade duxelles and roasted winter squash.

Housemade Duxelles

Try pairing this week’s risotto with our housemade duxelles—a finely chopped mixture of fresh mushrooms, shallots and herbs sautéed in butter and wine.

Farm & Larder Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.

Italian Rustica Bread

This freshly-baked loaf is made at a small bakery in Snohomish using a wild yeast starter, which creates an airy, chewy bread and a delightfully-crisp crust.

Santa Julia Cabernet Sauvignon

Medium-bodied and well-balanced with soft tannins and a long finish, this lovely Argentinian wine features appealing aromas of eucalyptus, plus red and black fruits on the nose that grow into a palate full of black cherries, currants and a touch of black pepper.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. With the short days of winter, the girls are up with the sun to roam the outdoors. Bedtime is much earlier now, as we see them heading into their house to roost as the sun is going down.

Grana-Style Cheese

This hard Grana-style cheese is crafted from part-skim cow’s milk to allow for longer aging of 24 months or more. Ideal for grating over soups and pastas, the drum-shaped cheese is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Big Spoon Roasters Nut Butter Bars

These handcrafted, palm oil-free nut butter bars are made to order in Durham, North Carolina with world-class ingredients sourced directly from local and like-minded producers.
