Cajun Spice
From sweet cornbread and spicy Andouille sausage to premium red beans and jasmine rice, the classic flavors of the deep South await this week, blending beautifully with fresh, Pacific Northwest produce including parsnips, celery root and carrots, plus both black and purple Daikon radishes. The boldly-assertive menu also features a robust Spanish red-blend wine, nutty whole grain loaf and hearty Swiss chard to serve alongside these Cajun favorites.

Here’s what you’ll find in your box this week:

Rojo Chiquito Red Beans & Jasmine Rice

Everything you need to re-create the delicious Louisiana staple, including premium dried Rojo Chiquito beans from Mount Vernon’s Hedlin Farms and long-grain jasmine rice. Check this week’s enclosures for our favorite red beans and rice recipe, infused with our flavorful housemade chicken stock and served with sliced Andouille sausage.

Skagit River Ranch Andouille Sausage

This pig has kick! Spiced with fresh-cracked pepper, hot paprika and cayenne pepper, this flavorful sausage is crafted from Skagit River Ranch’s famous all-natural pork. These pampered pigs root, dig and roam in certified-organic pastureland located outside of Sedro-Woolley, thriving on a diet of flax seed, corn and wheat. (Please note: Smoked chicken from Double D Meats will be substituted for those subscribers who have requested no pork products.)

Housemade Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt and black pepper.

Farm & Larder Cornbread Mix

Our signature mix produces a classic, old-fashioned-style cornbread with the natural sweetness of corn. It is best baked in a preheated cast-iron skillet until golden brown and then topped with sweet butter and honey.

Fresh Whole-Grain Bread

Crafted in nearby Snohomish by our favorite local bakery, this round loaf is crafted from locally-milled Shepherd’s Grain flour and 7 different whole grains, plus a hint of honey and toasted sunflower seeds.

Orowines Bluegray Priorat

This robust red blend from the Gil Family Estates is named for the small, dynamic wine region of Priorat in Catalonia where its luscious blend of 45% Grenache, 30% Carignan and 25% Cabernet Sauvignon grapes are grown.

Farm Fresh Eggs

As they spend more time snug in their coop during the cold, blustery winter months, our heritage breed laying hens are enjoying an extra helping of grain to supplement their diet, in turn supplying us with eggs in beautiful shades of brown, blue and green.

Farm-Fresh Fruit

Crisp Cameo apples from Tonnemaker Family Orchard, plus Cara Cara oranges.

Seasonal Organic Fruits & Vegetables

This week’s produce selection also includes yellow onions, celery root, parsnips, black radishes, purple Daikon radishes, sweet red peppers, Carnival winter squash and Chantenay carrots.
