Summering in France
Beautiful, classic and colorful, Niçoise Salad is the hallmark of summer in France, layered with fresh, crisp produce, creamy hard-boiled eggs and briny accents like black olives and protein-rich tuna. This week’s box celebrates this summer staple with local and imported ingredients to create your own version, plus a crisp baguette, delicious Bella Cerise apricots, and a light Rosé from Provence.

Here’s what you’ll find in your box:

Salade Niçoise

This protein-rich salad from Provence balances the best in summer produce with a classic French trio of salty anchovies, black olives and tuna. This week, we’ve included the ingredients to craft your own version of Julia Child’s classic recipe (see the enclosed recipe card for ideas!):

Imported Provençal Black Olives

Rich, fruity and marinated with fresh thyme.

Genova Tuna

Rich in Omega-3 and packed in traditional style with olive oil.

Anchovies

These salty, deeply-flavorful filets are the perfect finishing touch!

Cherry Tomatoes, Fingerling Potatoes & Green Beans

Sweet 100 cherry tomatoes and Russian Banana fingerlings, plus Emerald green beans from Bright Ide Acres in Snohomish.

Niçoise Vinaigrette

This light Dijon mustard-based dressing is seasoned with sea salt, cracked pepper, fresh herbs and tart white wine vinegar.

Baguette Bread

Baked just for us by a small bakery in nearby Snohomish, this fresh loaf embodies classic French baking with a delightfully-crisp crust and an airy interior. It pairs beautifully with this week’s salad—simply slice and serve with your favorite compound butter!

Vidaubanaise ‘Le Provençal’ Rosé

This Rosé embodies the essence of summer, heralding from Provence in the South of France. A traditional Provençal blend of 50% Grenache, 20% Cinsault, 20% Carignon, and 10% Syrah, it is light and refreshing, with perfumed notes of strawberries, citrus rind, and a touch of creaminess on the palate. Established in 1912, the Vidaubanaise cooperative of Provence is comprised of over 130 vineyards, which offer up a sampling of their annual crop in order to produce a series of wines representative of the greater Provence region.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown, blue and green, perfect for this week’s salad. With the long warm days of summer, the “girls” spend their days outdoors chasing tasty bugs, taking dust baths, and enjoying the healthy greens and raspberry leaves we feed them from the garden.

Jersey Tomme Cheese

Made in our own micro creamery at Bella Luna, this Alpine-style cheese is crafted with raw whole milk and extra cream from pasture-fed Jersey cows from the Snoqualmie Valley, then aged in our cave for six months, lending to a delightful, rich taste.

Seasonal Organic Fruits & Vegetables

This week’s produce selection also includes Walla Walla sweet onions, Shunkyo radishes and Nelson baby carrots from Local Roots Farms, plus juicy Bella Cerise apricots from Douglas Orchards.

Baby red romaine lettuce, escarole and Italian Red Rib dandelion greens.

Fresh Garden Herbs

Fresh thyme, basil, purple garlic, shallots and Italian parsley from the Walled Garden at Bella Luna Farms.
