What’s In The Box? July 8-14

JULY 8-14

Flavors of the Mediterranean
The light and bright flavors of Greece lend themselves beautifully to this week’s box as favorites like cucumbers, snap peas and summer squash all begin their summer ripening. Take advantage of this bounty with a menu starring freshly-baked focaccia bread and imported extra virgin olive for dipping, plus briny Kalamata olives, gorgeous sheep’s milk feta cheese and fragrant oregano, all to incorporate into a Greek village salad along with your choice of produce. Tunawerth Greek-style yogurt, farm-fresh eggs and ripe apricots complete this lineup of Mediterranean-inspired delights.

Here’s what you’ll find in your box this week:

Colli Etruschi 100% Caninese Extra Virgin Olive Oil

This bold, rustic olive oil is made from 100% Caninese olives from the Colli Etruschi Cooperative in the Etruscan town of Blera, just north of Rome. An intense fruity olive oil with a peppery finish and a tannin-like mouth sensation, it is impressive in its versatility, adding rustic green olive flavor to the likes of antipasti, pasta and vegetable dishes, as well as Mediterranean-style salad dressings.

Focaccia Bread

This soft, chewy Italian-style loaf is baked just for us by our favorite local bakery. Kissed with fragrant fresh herbs, it is delicious served warm and dipped in this week’s olive oil.

Kalamata Olives

These briny Mediterranean favorites are sure to add flavor and bite to your salads and more this week.

Mercouri Estate Kallisto 2018

Located in the western Peloponnese on the plateau of the Ichthis peninsula, the Mercouri Estate has over 150 years of history of wine production and is still owned by the Mercouri family. This Kallisto is a blend of 80-percent Assyrtiko and 20-percent Robola. It pours bright and light yellow in color, gives forth perfumes of citrus fruits and has a balance of pear and citrus in the long and refreshing finish.

Harmony Fields Sheep’s Milk Feta

This sirene-style white brine cheese from Harmony Fields situated in the Skagit Valley is made from 100-percent sheep’s milk. Similar to Greek feta with a tart, lemony finish, it has a creamier texture than most feta, with a touch of saltiness that pairs perfectly with salads.

Tunawerth Creamery Greek Yogurt

Perfectly-creamy, yet delightfully-tangy, this lovely yogurt hails from a small, family-operated creamery located in Tenino, Washington.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms, our heritage breed laying hens supply us with fresh eggs in beautiful shades of cream, beige and brown.

Cairnspring Mills Organic Edison All-Purpose Flour

This Burlington-based company is rediscovering the heart and soul of flour-making by producing small-batch, responsibly-grown flours made solely from wheat grown in the Pacific Northwest. Ground from a hard white spring wheat, this rich, nutty and buttery flour is perfect for your baking needs and beyond.

Sliced Almonds

Add a little crunch to your salads or to a sweet dessert featuring grilled apricots (see recipes!) with these sliced California almonds.

Seasonal Organic Greens

Frisée, sunflower shoots and Lusia radicchio.

Fresh Apricots

It’s stone fruit season! This week, enjoy gorgeous, ripe apricots.
