Spring Risotto Night
The winning combination of warm, cozy risotto, fresh bread and crisp salad always seems to soothe both body and soul—which is especially welcome with the ‘Juneuary’ weather we’ve had of late. Cozy up with a homey risotto crafted from homemade chicken stock, spring onions and garlic scapes to pair alongside Gruyère cheese bread, a smooth Chardonnay and other fresh produce that includes crisp summer greens, cherries and favorites like rainbow Swiss chard, baby green cabbages and Shunkyo hot radishes. Eat up!

Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the region. When cooked with chicken stock and a splash of wine, it becomes creamy and starchy and is a great accompaniment to just about any flavor combination—including this week’s duo of garlic scapes and grilled Walla Walla spring onions.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.

Gruyère Cheese Bread

Made in nearby Snohomish by our favorite bakery, this freshly-baked loaf balances sweet, nutty Gruyère cheese with a light, crisp crust. Absolutely delicious toasted or re-warmed in the oven—just sprinkle with a few drops of water and bake at 350° for about 15 minutes.

BTR Cellars Vincent Chardonnay

Fragrant with notes of spiced pear and pineapple, this Columbia Valley Chardonnay from the esteemed Mark Ryan Winery is fermented in stainless steels tanks at a very low temperature to maintain the smooth, full-bodied mouthfeel.

Sheep’s Milk Romano-Style Cheese

Crafted in the Italian tradition from 100% whole sheep’s milk, this hard Romano-style cheese boasts a sharp, salty flavor that beautifully accents this week’s bright spring risotto.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. The “girls” are enjoying the long afternoons, chasing bugs and eating tasty green weeds we pull from the garden.

Blueberry Jam

Made here at Bella Luna in our farmhouse kitchen from fresh-picked blueberries, organic cane sugar and pectin. (That’s it!)

Beautiful ripe red cherries, fresh apricots and zesty lemons.

Seasonal Organic Vegetables
