What’s In The Box? June 25 – July 1

Summer Splendor
It’s now officially summer, which means sun-soaked days, leisurely evenings and produce-filled meals on the patio. Fittingly, this week we’ve captured the taste of early summer, from crisp garden greens and sweet cherry tomatoes to a refreshing pasta salad kissed with lemon-dill vinaigrette and flaky smoked salmon from West Seattle’s Loki Fish Company. Pair these with a fruity Pinot Gris and airy Italian rustica bread, then sit back and enjoy the flavors of the season.

Also, don’t forget: We happily recycle any of the packing materials and containers in your box. Just return them to the box before your next delivery. Thank you!

Here’s what you’ll find in your box this week:

Lagana Foods Campanelle Pasta

Founded by local superstar chefs Ethan Stowell and Kaela Farrington and made in downtown Seattle, Lagana Foods pasta is crafted using semolina flour and water, then cut to shape using traditional bronze dies. This curly campanelle (“little bells” in Italian) is the epitome of rustic elegance—try it this week incorporated into a pasta salad tossed with a lemon-dill vinaigrette and flaky smoked salmon (see recipes for complete details).

Loki Fish Company Smoked Wild Coho Salmon

Salmon from this local family-run operation is treated with the utmost care, gill-net caught off the shores of southeast Alaska before being smoked here in Monroe, Washington. Tender and moist, this top-quality Coho fillet is brined in honey and salt and then hot-smoked for the perfect flaky texture.

Italian Rustica Bread

This freshly-baked loaf is made at a small bakery in Snohomish using a wild yeast starter, which creates an airy, chewy bread and a delightfully-crisp crust. This loaf re-warms wonderfully in the oven—the trick to a great crispy crust is to brush a little water on top before reheating!

Lone Birch Pinot Gris

This beautiful wine from this fourth generation family-owned and operated winery in the Yakima Valley boasts an enticing bouquet of tropical fruit, leading to a well-balanced, medium-bodied mouthfeel with luscious flavors of pineapple, pear, and white peach.

Farm Fresh Eggs

Our small flock of heritage breed laying hens supply us with fresh eggs in beautiful shades of brown and green. With the arrival of summer, the “girls” are enjoying long afternoons in the sun, chasing bugs and eating tasty green weeds we pull from the garden.

Fresh Blueberries

Juicy, first of the season blueberries!

Almond Blueberry Crisp Topping

Our signature crisp topping, crafted in-house from ground almonds, organic sugar and sweet butter.

Seasonal Organic Fruits & Vegetables

This week’s produce selection also includes red cherry and yellow pear tomatoes, red beets, cauliflower, Walla Walla sweet onions, English cucumber, baby carrots, and lemon.

Seasonal Organic Greens

A beautiful selection of Chioggia and Variegata di Lusia radicchio, Scarlet Frills mustard greens, Lacinato kale, Bietole Italian chard, baby mixed lettuces and Mizuna greens. Also: Shungiku, an edible Japanese chrysanthemum with a pungent, herby flavor—excellent lightly sautéed in olive oil with garlic, or incorporated into a salad.

Fresh Garden Herbs

Organically-grown Italian parsley, mint, dill, thyme, garlic and shallots from the walled garden at Bella Luna.

Fresh Flower Bouquet

A fragrant, fresh arrangement composed of last of the season peonies and garden roses.
