What’s in the Box? June 26-July 2

Tastes Like Summer
It’s officially summer, which means sun-soaked days, leisurely evenings and produce-packed meals on the patio. Fittingly, this week we’ve captured the tastes of early summer, from fresh jam made from locally-grown strawberries and a housemade pasta salad kissed with lemony bergamot to flaky smoked salmon caught by West Seattle’s own Loki Fish Company. Pair these with crisp shaved fennel, tangy rye bread and our mixed vegetable giardiniera, then sit back and enjoy the refreshing flavors of the season.

Here’s what you’ll find in your box:

Loki Fish Company Smoked Salmon

Salmon from this local family-run operation is treated with the utmost care, gill-net caught off the shores of southeast Alaska before being smoked here in Washington. Tender and moist, this top-quality Pink salmon filet is brined in honey and salt and then hot-smoked for the perfect flaky texture. Try it this week topped with crisp shaved fennel—check the enclosed cards for the recipe!

Orzo Pasta Salad

Simply fresh and incredibly elegant, this refreshing pasta salad is made in-house from al dente orzo, zesty Italian bergamot oil, crunchy celery and shallots, then topped with olive oil, fresh parsley, and thyme.

Housemade Garlic Croutons

Baked with olive oil, sea salt and fresh garlic until crisp, these chunky, rustic bread croutons add a little something special to this week’s fennel salad and smoked salmon combo, or to a salad of fresh greens.

Rye Bread

This dense, flavorful loaf is baked just for us at a small bakery in Snohomish with medium-grain rye flour and light caraway seed.

Marge Granola Triple-Grain Muesli

A Swiss morning classic, this traditional unbaked muesli from local bakery Marge Granola is high in protein, fiber, vitamins and minerals and boasts the bakery’s signature 3-grain blend of organic rolled oats, organic rye and organic spelt, as well as crunchy almonds, plus pumpkin, sunflower and brown flax seeds. Try it in place of your favorite morning cereal, splashed with cold milk.

Milbrandt Vineyards “The Estates” Chardonnay

Selected by sommelier Yashar Shayan of Impulse Wine, this distinct and outstanding Washington Chardonnay is made by one of the best grape farming families in the state, the Milbrandts. The fruit is sourced from Evergreen Vineyard, in the Ancient Lakes region, near the town of Quincy at the center of the state. It’s medium-bodied, with plenty of flavor, showing hints of lemons, baked apples and fresh pears. Barrel fermented in 20% new French oak, this Chardonnay shows rich, creamy qualities, with hints of custard, eggnog and brioche.

Jersey Tomme Cheese

Made in our in-house creamery, this Alpine-style cheese is crafted with raw whole milk and extra cream from pasture-fed Jersey cows from the Dungeness Valley, then aged in our cave for five months, lending to a delightful, rich taste.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. With the arrival of longer and warmer days, the “girls” spend their time enjoying the sunshine, chasing bugs, and eating all of the tasty, rich greens we pull from the garden. As a result, you’ll enjoy bright yellow egg yolks this week!

Housemade Mixed Vegetable Giardiniera

Our take on the classic Italian relish is crafted from a medley of pickled vegetables including sliced carrots, Romanesco broccoli, cauliflower, sweet onions, garlic and roasted sweet red peppers. Pair with our Jersey Tomme and bread for a fresh appetizer.

Fresh Strawberry Preserves

Our housemade freezer style jam is crafted from gorgeous, organic strawberries grown in Washington. To preserve the wonderful fresh flavor and color, we make this ‘uncooked jam’ with berries, organic sugar, and pectin. (That’s it!)

Seasonal Organic Fruits & Vegetables

This week’s produce selection includes pole beans, baby fennel bulbs, Tokyo Market turnips and Local Roots Farms’ scallions, plus beets from Bright Ide Acres, fingerling potatoes, lemons and locally-grown Rainier cherries.

Seasonal Organic Greens

A mix of Red Butter lettuce and crunchy speckled summer lettuces from Local Roots Farm, plus fresh arugula.

Fresh Garden Herbs

Shallots, garlic, dill and parsley from the Walled Garden at Bella Luna Farms.
