Spring Fresh
All signs point to spring—budding trees in the orchard, fresh garden greens and the official kick-off of the season this Friday, March 20. Spring fare takes center stage in this week’s basket, too, with all the ingredients for a light stracciatella soup crafted from rich chicken stock, silky eggs and housemade kale-hazelnut pesto, plus rustic Italian bread, a crisp Pinot Gris and produce including radishes, curly kale rapini and Cremini mushrooms. Here’s what you’ll find in your box this week:

Stracciatella Soup Kit

This light, nourishing soup is fit for a spring supper, enriched with our signature chicken stock and then kissed with grated Grana cheese, kale-hazelnut pesto and silky egg strands (‘stracciatella’ means ‘little shred’ in Italian)—see this week’s recipes for full instructions.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, our housemade stock is simmered with carrots, onions, parsley and celery and seasoned with just a dash of sea salt. Enjoy two quarts this week to use as a rich, flavorful base for your stracciatella.

Kale-Hazelnut Pesto

This fresh take on classic Italian pesto is hand-crafted from sweet basil, homegrown kale, and hazelnuts mixed with garlic, top-quality olive oil, lemon juice, plus our Grana-style cheese.

Grana-Style Cheese

This hard Grana-style cheese is crafted from part-skim cow’s milk to allow for longer aging of 24 months or more. Ideal for grating over soups and pastas, the drum-shaped cheese is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Farm Fresh Eggs

Our heritage breed laying hens produce beautiful eggs in shades of brown, blue and green with bright yellow yolks, lending themselves well to this week’s soup.

Nine Hats Columbia Valley Pinot Gris

Grapes for this Pinot Gris from Long Shadows’ nine all-star winemakers were sourced exclusively from The Benches Vineyard at Wallula, sited some 1,400 feet above the Columbia River, where a constant breeze moderates temperatures to capture fresh flavors and give the wine a vibrant mouthfeel and rich finish.

Italian Rustica Bread

This freshly-baked loaf is made at a small bakery in Snohomish using a wild yeast starter, which creates an airy, chewy bread and a delightfully-crisp crust.

Creamy Honey Balsamic Dressing

Our housemade salad dressing, bright with fresh garlic, balsamic vinegar, and sweetened with honey. Delicious with peppery mustard greens!

Mediterranean Gigante White Beans
& Piquillo Peppers

Grown on the hillside slopes of Italy, these buttery Gigante white beans are dressed in olive oil and fresh herbs and accented by imported, whole Italian Piquillo peppers. Delicious on their own, they also lend hearty flavor to a salad of spring greens.

Seasonal Organic Fruits & Vegetables

This week’s produce selection includes baby leeks, Easter Egg radishes, Cremini mushrooms and red spring onions, plus red d’Anjou pears, Meyer lemons and curly kale rapini from Local Roots Farm.
