During this challenging time, we are finding ourselves ever more grateful for the comforts of home and we hope to extend that same comfort to you with this lineup of satisfying, seasonal spring favorites. Starring our signature roasted cauliflower-Porcini mushroom soup and fresh Challah bread, plus a bonus meal of eggy pappardelle pasta and mellow Pioppino mushrooms, this week’s box also includes a tart Columbia Valley red, farm-fresh eggs and springy pea shoots, Meyer lemons, bright herbs and other all-stars from the garden. Roasted Cauliflower Soup with Porcini Mushrooms

To produce this incredibly comforting soup, we first roast meaty cauliflower with top-quality olive oil and garden-fresh herbs and then blend those with leeks, onions, thyme, housemade chicken stock and just a touch of cream. Dried Porcini and mushrooms also lend rich, earthy flavor to this satisfying entrée.

Challah Bread

Baked just for us by our favorite bakery in Snohomish, this fresh loaf boasts a sweet, rich flavor thanks to a traditional base of silky eggs and Shepherd’s Grain flour, plus a touch of sugar.

Fresh Egg Pappardelle Pasta

This lovely, fresh handmade pasta is made by our favorite local pasta maker in Bellingham. Perhaps enjoy tossed with pea shoots, or with sautéed Pioppino mushrooms, these broad, flat noodles should rightly earn their name, which is derived from the Italian verb for ‘to gobble up’.

Cavatappi Sangiovese 2018

This beautiful Columbia Valley red features notes of red currant, raspberry and cranberry. The flavors are fresh, with plenty of tart, puckering cranberry notes throughout, making it a light and lovely pairing to this week’s soup or suggested pasta main.

Farm Fresh Eggs

Spending their time dodging raindrops on wet spring days, or strutting around their enclosure on sunny ones, our heritage breed laying hens are now also enjoying the tasty green popweed we pull from the garden, in turn supplying us with eggs in beautiful shades of brown, beige and cream.

Housemade Crème Fraîche

Crafted in our farmstead creamery from pasteurized organic sweet cream, this rich and silky crème fraîche is delicious mixed into a creamy salad dressing or with scrambled eggs.

Pioppino Mushrooms

This week’s box also includes beautiful organic mushrooms cultivated by the lovely folks at Cascadia Mushrooms in Bellingham. Popular in both Italy and Japan, the Pioppino has a mellow and attractive flavor and a firm texture; enjoy in soups, sauces and pastas!

Seasonal Organic Greens

Baby kale mix, pea shoots and sunflower microgreens.

Cosmic Queen Oyster Mushrooms

Locally-foraged Oyster mushrooms, which boast a beautifully-meaty, mellow flavor when cooked in a little butter or chicken stock.

Seasonal Organic Fruits & Vegetables

This week’s produce selection also includes golden beets, parsnips, purple sprouting broccoli, carrots, and leeks plus Bosc pears, Pippin apples, and Meyer lemons.
