What’s In The Box? March 7-13

And, we’re back! The first few days of March brought with it some most welcome sunshine and some subtle signs of the changing seasons. This week’s box perfectly captures this moment between winter and spring with bucatini pasta, Delicata squash, earthy duxelles and fresh spinach all at your disposal for a cozy-comforting supper, and then light and bright flavors courtesy of our cardamom pear butter, tangy Greek yogurt and even a raspberry-kissed chocolate bar. Enjoy these provisions alongside multigrain bread and farm-fresh eggs; we’ve also included fresh new ideas for cooking up that bevy of beautiful root vegetables.

Here’s what you’ll find in your box this week:

Fresh Bucatini Pasta

Hand-crafted in nearby Bellingham, this spaghetti-like semolina pasta has a hole running through the center—hence the name bucatini, which comes from the Italian buco, meaning “hole”, while bucato means “pierced”.

Housemade Duxelles

Crafted from a finely chopped mixture of wild mushrooms, shallots and herbs sautéed in butter and wine, it lends earthy, elegant appeal to a variety of dishes. We love it tossed with this week’s bucatini along with squash and spinach greens.

Sesame-Ginger Dressing

This housemade dressing lends flavorful appeal to salad greens or roasted veggies!

Multigrain Bread

Crafted in nearby Snohomish by our favorite bakery, this freshly-baked loaf is made with locally-milled Shepherd’s Grain flour, seven different whole grains and a hint of honey, then topped with toasted sunflower seeds.

Domaines Paul Mas 2016 Côté Mas Blanc Méditerranée White

A blend of Grenache Blanc, Vermentino, Chardonnay and Sauvignon Blanc grapes, this Rhone-style white blend opens with lovely herbal notes of thyme, lavender and coriander. A pleasant bitterness lends texture to the palate, while the finish is clean and fresh.

Farm Fresh Eggs

Spending their time dodging raindrops on wet, almost-spring days, our heritage breed laying hens are now also enjoying the tasty green popweed we pull from the garden, in turn supplying us with eggs in beautiful shades of brown, blue and green.

Grana-Style Cheese

Made in our farmstead creamery, this hard Grana-style cheese is crafted from part-skim cow’s milk to allow for longer aging of 24 months or more. Lovely grated over pasta, the drum-shaped cheese is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Tunawerth Creamery Greek Yogurt

Perfectly-creamy, yet delightfully-tangy, this lovely yogurt hails from a small, family-operated creamery located in Tenino, Washington.

Cardamom Pear Butter

Fragrant with warming spices like cinnamon and cardamom, this housemade spread stars the mellow, sweet flavors of orchard-picked pears. Try adding a scoop to this week’s Greek yogurt along with a sprinkling of granola!

Made ‘bean-to-bar’ in Dick Taylor’s small Northern California factory, this dark chocolate bar is kissed with a mix of organic, freeze-dried raspberries and organic vanilla-coconut palm sugar.
